Taco Empire

In 2011, newlyweds José Carlos Cornejo and Pilar Esparza started an exciting new chapter, moving from Aguascalientes, Mexico, to Oklahoma. With lots of experience in hospitality, they decided to follow their dreams and start their own business. José, inspired by his mother’s cooking, and Pilar, a third-generation restaurant owner from Calvillo, Aguascalientes, combined their skills and love for serving others. In June 2022, they launched Taco Empire the Foodtruck, offering a simple menu specializing in tacos with blue corn tortillas.
