Located in the heart of DC’s Bloomingdale neighborhood, établi is the latest venture from seasoned restaurateurs Kathleen Davis and Thomas Boisvert. établi, French for “established,” aims to create an environment where guests can explore wine from around the globe and cultivate their palate. We believe in the adage de gustibus non est disputandum, “in matters of taste, there can be no dispute,” and encourage guests to find the right wine for them.
