BiangBiang noodles are a specialty from Xi'an, known as the noodle capital of China. They are named after the "BiangBiang" sound made when the hand-pulled noodles slap against the work surface during preparation. However, these two characters do not exist in traditional Chinese writing, so people created a unique character to represent it BiangBiang noodles are made entirely by hand, and one of their most notable characteristics is their thickness, resembling a belt.
