A bold and aromatic rice dish of extra-long-grain basmati rice, red and green bell peppers, carrots, peas, cauliflower, green beans, onions, garlic, ginger, homemade Ghee (clarified butter) and a variety of warm spices (whole mace, cardamom pods, star anise, bay leaves, cinnamon, turmeric, black pepper, biryani masala). Served with raita (yogurt).

A combination of 1 vegetable curry with rice and a choice of 3 roti or 2 paratha (plain or methi). 1 vegetable curry of your choice, basmati rice, raita (yogurt and diced cucumbers). Choose a vegetable curry: Undhiu, Tindora Aloo (Vegan), Dal Makhani, Karela Aloo (Vegan), Pakoda Kadhi. Choose a bread: 3 Roti, 2 Plain Paratha, 2 Methi Paratha.

A mixture of shredded mooli (daikon radish), finely chopped red onions, ginger and garlic, cilantro, turmeric, and other spices stuffed inside a whole wheat dough; rolled out and cooked/roasted with canola oil on an iron tawa. Served with raita and pickle.

Unleavened whole wheat bread. Phulka roti is a traditional bread of Western India, similar to a tortilla, that accompanies the variety of curries. First, a mixture of whole wheat flour and a little canola oil is made into a dough. Then this mixture is made into dough balls, rolled out with a bit of all-purpose flour, and placed on an iron tawa. After the Roti disc cooks for a few seconds on each side, it is taken off the tawa and directly onto the gas flame. The roti puffs up into a ball and flattens after. Enjoy the softness and freshness!
