In the late 1800’s during the building of the Union Pacific, Cheyenne was actually nicknamed Paris of the West because it was deemed to be so fancy for its time. Because the restaurant is located inside a building commissioned to be built by the Union Pacific in 1961 and because for years Union Pacific employees were a huge part of the building's history, we wanted to pay tribute to the roots of Cheyenne and the building's history. But don't worry, the name is as fancy as we get!
