The Modern Korean result includes Paju Fried Rice with kimchi, bacon, squid ink, smoked quail egg; Yellowtail with Naengmyeon broth, lemon verbena and finger lime; Bugak, a take on tacos with oxtail, ramp and sunchoke; and Paju Crispy Pancake with seafood mix, perilla leaves, and bonito flakes.
