Matsu

Matsu is the Japanese word for “pine.” The tree is a bridge between cultural inspiration and our sense of place. A connection between its deeply rooted significance in Japanese culture and the rare Torrey Pines that uniquely dot the San Diego landscape. Matsu follows a new light in modern Japanese cooking while paying homage to centuries-old tradition. Matsu honors the philosophies behind the culture and its cuisine while expressing the local terroir and what grows naturally around us, as the Japanese would. The menu is the study of pristine, simple ingredients, the overall experience a balance of ritual and serenity, providing a sense of omotenashi, or Japanese hospitality.
