Hamachi is Japanese amberjack or yellowtail (also sometimes known as "buri") and the collar of this fish is especially great -- Grilled at a high heat with sea salt and citrus -- served with grated daikon radish to cut through the richness.

Each order is two skewers of either:yakitori -- dark meat chicken with scallions tontoro -- pork cheek marinated in koji and misotsukune -- chicken meatball or one skewer of motsu (pork chitterlings) All are grilled in finished with our 9-year old taré mother sauce of soy sauce, mirin, sake, and secrets.
