Honest John's features frozen custard, a delicious form of ice cream that includes at least 1.4% egg yolk, at least 10% butterfat and only a 20% overrun. Overrun is a measure of air whipped into the ice cream product and for premium ice cream is typically 40-50% with value-oriented ice creams having as much as 100% overrun which means half of its content is air. Since frozen custard is made with egg yolks and has at least half the amount of air whipped in vs. premium ice cream (20% vs. 40-50% overrun), it is dense, creamy and irresistibly delicious.
