      Bruxellensis is refermented for several months with a wild Brettanomyces yeast originated in Brussels. Amber with copper reflections, its fruity attack (pineapple, red fruits) is supported by hop flavours in dry hopping, and by complex, almost animal notes of old leather. It then develops a rich malty note with biscuit accents and a persistent fruity/candied flavour. Its finale is dry and bitter, its character is unique.

      Cantillon Kriek 100% Lambic is a traditional kriek lambic. The fruit is a Morello (variety: Kelleris) organic sour cherry imported from Turkey with 200g added per liter of lambic. The fruiting process for Kriek 100% Lambic consists of taking pre-frozen cherries and placing them whole in stainless steel tanks with two-year old lambic for a maceration period of 1-2 months. It is then transferred to a stainless steel bottling tank until it is ready to be bottled. A quantity of young lambic is added before bottling to obtain a secondary fermentation in the bottle. A flagship beer, Cantillon Kriek is one of the most common bottlings to find.

      "De Cam is still one of the smallest lambic blenders in Belgium, receiving its lambic from Boon, Girardin and Lindemans. The blendery located in Gooik is also a member of HORAL. Most of the barrels used at De Cam are former 1000 liter Pilsner Urquell casks. Karel, the blender, was trained by the legendary Armand and Gaston Debelder at Drie Fonteinen. For the Oude Geuze, young lambic, with a minimum maturation of one year, and old lambic, with a minimum of two years maturation, are mixed according to the taste of the “Geuzesteker”. This geuze is quite dry, bitter and comparatively less acid than other geuze blends." 6.5% ABV
