Efren Guitron, from Cuautla, Jalisco, brought his passion for Mexican cuisine to the U.S. in 1970. After learning family recipes in Seattle, he opened the first El Tapatio in Milwaukie, Oregon in 1980. Starting as a one-man show, Efren’s dedication quickly attracted loyal customers, and the restaurant grew. Today, El Tapatio has 16 locations in Portland and restaurants in Boise as El Rancho Viejo. Still family-run, they serve fresh, authentic Mexican dishes like tacos, enchiladas, and Molcajete, with healthier options using vegetable oils and sea salt.
