No words. Just very disappointing for what one expects of a French restaurant. Well, I wasn’t going to say anything else and no “revenge” as you say involved, but Mr. Wladimir, after you excusing yourself and insulting me with my excess of drink (untrue), I will add that the 2019 crianza wine was on its way out by 2024 and you still dare to sell it. I said nothing because I had a friend with me and I had already said enough. Your scallops were NOT fresh, real scallops. You brought out the container in which they are delivered to you weekly and, it was clearly labeled as “scallop MEAT”, not fresh scallops. These, usually come in their shell and have flavour even if you take them out of it. Your scallops taste of nothing. Another thing one doesn’t expect from a so well experienced and trained chef as yourself, is that every dish was accompanied by lamb’s lettuce and tomato, something I can do myself at home. I don’t pay 70€ for a tasteless meal served with lamb’s lettuce and tomato on everything when I can do it myself at home. I pay for what I can’t do. What’s really appalling is your attitude to hide your lack of imagination and creativity innate to any great chef, behind what you believe and classify as drunken words. I have eaten in many renowned places. Yours isn’t one of them right now. P.S.: by the way, I have read the majority of your reviews and good for those that do enjoy your food. Those who say the contrary are immediately under your attack and not even in a polite way. You are obviously incapable of accepting any criticism to improve your current cuisine. You evade responsibility and insult people, twist reality to excuse yourself (you accused me of over drinking and literally implied I’m a drunkard when nothing further from the truth !), call them trolls, threaten them with taking them to court for defamation… who should take who to court? You, Sir, in my humble opinion and experience in your house, are living off memory and your 1976 Michelin star, the praise and signatures of ministers and whoever else you catered for then, but, have you maintained your star? I wonder how those people would react now to your lamb lettuce and tomatoe garnish, your reheated mushroom cream sauce with overcooked, bland mushrooms (difficult to spoil a good, fresh mushroom if cooked on the spot, isn’t it?). It’s such a shame that someone who has obviously had a brilliant past, has set up a restaurant that is far from the typically French, cosy, chic, warm place. So something that should be a privilege for Valencia’s customers, is actually disappointing and hard to enjoy.

A taste of France with a Ukrainian touch! Recently, I had the pleasure of dining at Chez Wladimir, a restaurant that impressed me not only with its exquisite French cuisine but also with its warm ambiance and genuine hospitality. The restaurant's owner, Oksana, deserves special mention. Her Ukrainian roots are evident in everything. Oksana personally greeted me, shared the restaurant's story, and offered some valuable advice on choosing dishes. As for the food, it was a true work of art! I ordered the salmon tartare for an appetizer, which simply melted in my mouth. Fresh salmon, combined with tomato, onions, and a sour sauce, created an exquisite symphony of flavors. And for dessert, I couldn't resist trying pear with caramel sauce. It was simply incredible! Juicy pear, glistening caramel sauce, ice cream and crunchy pastry - a combination that I will remember for a long time. Overall, I highly recommend to visit this place. For anyone looking for not just delicious food but also a cozy atmosphere and genuine hospitality. It's a place where you can not only enjoy exquisite French cuisine but also feel the warmth of the Ukrainian soul.
