Our Senior Pitmaster started learning the “Art” of barbecue in Louisiana back in the early 1980’s. Trust us, it takes a lot of mistakes to get to this point! Brisket was particularly difficult to master. Next, we believe it’s the way we smoke and the equipment we use. Like our own custom-built smokers and 100% real wood! Nothing in our opinion can achieve the flavor profile of real wood!
