It's what we serve at V&F and we hope you take a bag home as well!About The Coffee Farm:While many are familiar with Huehuetenango and the reputation of the coffee region, few have ventured to this isolated corner of Guatemala. Royal has gone many times over the years, and we are proud to have been the first to import Fair Trade certified coffee from Asociación Barillense de Agricultores (ASOBAGRI). The spectacularly rugged terrain has served to preserve the indigenous heritage, distinct clothing, and dialects that can vary from one mountain ridge to the next. In this cultural oasis, ASOBAGRI has become an important bridge to the international coffee community. This cooperative is simply one of the most sophisticated and well-organized in the world with more than 1,400 members, spread across 80 communities, who cultivate and harvest their own coffee on small farms with their own micro-mills. Promoting gender equality throughout the organization has been a shining success at ASOBAGRI. This particular lot called Las Dueñas Cafe is the culmination of an integrated program for 182 female members of ASOBAGRI. The program includes 5 women technicians providing training and technical support that is appropriately tailored to the needs of the members. Strategies like using the coffee pulp to make organic fertilizers reduce the transportation costs associated with purchasing fertilizer from afar, and at the same time, creates an abundant source of plant nutrition that ensures better yields and quality. Income diversification investments in chicken farms, avocado trees, and local cafeterias have also strengthened the options for women members.

There are approximately 1400 hectares shared among 650 farmers. Once ripe cherries are picked, they are dried in the sun on drying beds for about 18-21 days. In the daytime, the cherries need to be raked periodically in order to ensure a consistent drying process. They also cover the cherries from 12 to 3 pm in order to protect them from the hot sun. This cover is also used at night to protect the cherries from rainfall.

4oz of Lively Run Blue Yonder cheese, as featured on our meat & cheese plates!Blue Yonder is a cow’s milk blue cheese. Both subtle and complex, this creamy cheese is very approachable. While the rich Holstein milk from which it is made gives the paste lovely yellow tones, it is marbled throughout with pockets and veins of deep blue.

One of our favorite cheeses; featured on both The Works and Cheese, Please! From Nettle Meadow in Warrensburg, Jersey cow milk is used to create this triple crème artisan cheese. Infused with a hint of NYS apple brandy, this cheese is buttery and smooth. Nettle Meadow was founded as a farm and animal sanctuary in 1990, and they are commited to the principles of natural ingredients, happy & healthy animals, and carefully hand-crafted artisan cheeses.

Shire is the result of a collaboration with Hopshire Brewing in Dryden, NY. It is made by soaking Gorge Trail Gouda in Shire Ale, a dark malty Scotch Ale, for three days. The resulting cheese is imbued with the toasty flavors of the dark malt and a slight coffee-like bitterness. We serve it on our Cheese, Please!
