No sulfur added and no disgorgement; zero-zero; 11.5% ABV Winemaker: Fausto Cellario Baffone (means big mustache!) is a blend of Nascetta (a rare native Piemontese varietal with excellent skins for maceration) and Moscato Giallo (a super aromatic varietal) vinified dry. This unusual grape combo makes a delightful bubbly elixir, lightly orange and hazy with pretty flowers, salty pear and juicy yellow nectarine wrapped around a core of electric acidity.

Fermented with native/spontaneous year with both whole cluster carbonic and semi-carbonic technique, as well as some destemmed traditional fermentation to capture the best of Gamay’s worlds - spice, fruit, tension, and structure. Aged in old barrels and concrete tanks, the wine was bottled after 8 months. This Gamay was made without fining or filtration and only a small sulfur addition when blended. This fantastic wine broods both brightness and darkness with its strawberry and spice-laden potion of deliciousness is perfect for Gamay lovers. The deep and dark mineral tones and crunchy palate linger on for what seems like many minutes before slowly dissipating to you guessed it, another sip.
