      We borrowed and twisted many of these techniques to produce Doc's Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers. Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc's Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Our finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.

      Michter's US*1 Single Barrel Straight Rye Whiskey is made from a mash comprised primarily of fresh, plump rye grains. Once the grains are harvested, they are sheared so that during fermentation, the grains are saturated with more flavor. The barrels are allowed to rest in a heat-cycled warehouse, which forces the wood to expand and contract as the temperature rises and falls. Perfect when enjoyed by-the-glass on its own, La Montesa's multi-faceted flavor profile-including ripe nectarines, pomegranates, blood oranges and fresh strawberries, infused with hints of sweet spice -will pair well with any kind of cuisine.
    • Shatter Grenache

      A collaboration between Joel Gott and Charles Bieler, Shatter is an obsession with Grenache and terroir. To date, it has been singularly focused on old vine, dry farmed Grenache grown in schist soils in the arid and hot valley of Maury in the Roussillon region of France. The hillside Grenache vines were planted over 60 years ago in 100% pure black schist, a slate-like, rocky soil common to the area. Though nutrient-poor, it retains heat well, allowing the slow-ripening Grenache to reach full maturity through cool nights. Tough soil, strong winds and hot days push the vines and cause shatter, or coulure, in the grape clusters, naturally thinning fruit from the vines and producing more intensely concentrated flavors.

      Pure Pinot Noir bursting with ripe red fruits and a subtle savory spice/tea accent. Cherry, raspberry and cranberry flavors make this one totally gulpable.
    • Hedges CMS

      Dark, deep ruby color. Aromas of black cherry, blackberry , sweet plum fruit and sweet toasted oak with undertones of ripe melon, dried herbs and vanilla with hints of cocoa powder, tobacco and graham cracker. On the palate toasted oak and graham cracker with lively acidity, darker berry fruits, cocoa powder and sweetness, good body with well integrated tannins that linger on the long finish. A nicely balanced wine, with enough acid and tannin to make this a more serious, longer lived wine
    • Robert Craig Affinity

      Bordeaux-style Cabernet blend from the southeastern foothills of Mount George, which also features Merlot, Cabernet Franc and Petite Verdot. Hatched from the cabernet-infused mind of Bob Craig in 1993, this Bordeaux-inspired wine is a blend of the Left Bank Five (Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec) with Cabernet Sauvignon commanding the lead on the dance floor. The Cabernet Sauvignon from this hillside property is unusually racy, and mineral laden, even for a boulder strewn, Napa Valley vineyard. The addition of the other four Bordeaux varieties is necessary for the depth, dimension and layers that are present in the wine each vintage; Petit Verdot for color, Malbec for weight, Cabernet Franc for structure and Merlot for luxurious mouthfeel.

      There are 20,000 cases of the The Prisoner, which is an interesting blend of 46% Zinfandel, 22% Cabernet Sauvignon,18% Petite Sirah, 12% Syrah, and a small amount of Charbono. Its deep ruby/purple color is followed by a big, peppery, meaty, Rhone-like bouquet with hints of bay leaf, unsmoked cigar tobacco, black currants and sweet jammy cherries. Medium to full-bodied and explosively fruity, this is a lovely, hedonistic, seriously endowed red to drink over the next 3-4 years.

      Burgundian in sensibility but with California style is one way of describing Jim Clendenen's Chardonnays- Structure and restraint melded with bountiful opulence is another. Citrus, stone fruit, smooth and integrated flavors, creamy and tense, with apricot, apple, and lemon nuances.
    • Matchbook Chardonnay

      The luscious opulence of this wine is evident by its beautiful golden straw color. Aromas of spiced pears, caramel and baked apple are layered over butterscotch and brown barrel spices. The flavors are an enticing play of crisp apple and cream, Crenshaw melon and Creme brulee. We make this rich, full-bodied chardonnay in the traditional manner with barrel fermentation and lees stirring to give the wine a luscious viscosity and elegance.
    • Gotham Sabine Rose

      (40% Grenache, 25% Syrah, 25% Cabernet Sauvignon, 7% Cinsault, 3% Rolle). The 2016 Sabine delivers the classic Provence Rose profile, a delicate balance between floral, herbal, red fruit and acid from a spectacular vintage in the hills surrounding the beautiful and ancient city of Aix-en-Provence. Notes of wild red fruit berries, lavender, rose petal and underlying savory herbs de Provence with assertive acidity the finish. ALC BY VOL 12.8%
    • Rancho Rodeo Merlot

      This Merlot leads with aromas of cedar and toasty oak, and follows up with flavorful layers of plums, blueberries, black cherry and vanilla. Structured, balanced and bursting with flavor, this memorable Merlot was aged in French and American oak. The wine finishes with smooth tannins and luscious flavors.
    • Fossil Point Pinot Noir

      The 2019 vintage was generous, with ripe dark plum and berry flavors, orange peel, and a rich smooth palate feel. Careful use of French oak frames the wine without obscuring herbal scents of marjoram and black tea.
    • Diseno Malbec

      Diseno Malbec is a deeply opaque purplish-red with a dense red core going out into a dark violet-red rim definition and medium-high viscosity. Diseno Malbec has dark berry fruit medley, melted English licorice, bittersweet dark chocolate and almost minty bursts of blackberry jam. The midpalate features a ripe tannin backbone and nice balance, finishing with a juicy kick of cherries and minerals.
    • Angeline Pinot Noir

      Vivid notes of candied cranberry, raspberry, and dark cherry, with cola, toasted oak, and earthy backbone with smooth tannins.
    • Santa Julia Malbec

      A fruitball of a Malbec, with bright, friendly aromas of berry, cola and cherry cough drop. It feels full, round and well balanced, with a black cherry flavor bearing a mild herbal underbelly. The finish is fruity without being heavy.
    • N2 Cabernet Sauvignon

      This California cabernet sauvignon is a blend made from 1/3 Napa Valley fruit and 2/3 Lodi fruit. It is a juicy, fresh cab with medium tannins and subtle structure. We aged the Napa Valley wine in French oak, but the Lodi wine was stored in stainless steel drums to achieve what we believe to be the best style of cabernet sauvignon to serve from a keg. This is a delicious, mouth-watering every-day drinking wine with elegance. The nose is full of red cherries, strawberries, savory herbs, graphite and roses.
    • Klinker Brick Old Vine Zin

      The most rich, intense and multi-dimensional zinfandel tends to be produced from Old Vines, vines that are at least 50 years old. Old Vines, also known as Ancient Vines, Gnarly vines, Old Timer Vines, Old World Vines or Old Twisted Vines are in decline, mature in age, with low vigor. They tend to have fewer clusters of grapes with smaller berry size, yielding more intense sugars, color and concentration of flavors typically producing wines that are generally better balanced with more body and structure.
