This cut is one of Mexico’s most popular steaks because of its unique and delicious flavor. Arrachera refers to the inside skirt steak. This is a thin and long cut that comes from the diaphragm of the cow, meaning it is a muscle that is in constant and extensive use through out the cows life. Because of this, the arrachera is usually a bit tougher than other steaks.
