This family favorite is made with Louisiana crawfish from a Crawfish farm in Church Point. The original recipe is from my bonus dad. Over the past 15 years, we've taken Paw Man's Etouffee recipe and made it ours. Not too many changes, just a few tweaks to suit our tastes. No roux in this recipe, we prefer a cream base that is cooked down with vegetables, herbs and spices and simmered on low for hours to get our rich color and flavor. This recipe does not disappoint!
