Beer of spontaneous fermentation, the Oude Pinot Noir Tilquin à l'Ancienne is made from the fermentation of 260 gr of Pinot Noir grapes by liter of lambic. Unfiltered and unpasteurized, this beer is refermented in the bottle. The Pinot Grapes are organic grapes from Burger in Steinseltz. Originally, this beer was made for the 10 year anniversary of Moeder Lambic, with Pinot Noir grapes coming from Valentin Zusslin Estate, cultivated in biodynamic viticulture, and harvested by hand on their Bollenberg vineyard. 750ml//8.2% abv. The Oude Gueuze Tilquin à l'ancienne is a blend of 1, 2 and 3 years old lambic refermented in bottle for at least 6 months. "Oude" in flemish or "à l'ancienne" in french is an appellation protected by the EU and is restricted for traditional Belgian gueuze in bottle. 7% abv, 750ml bottle. Belgium

“The one that knows it all, still has to be born” as Armand would say. From time to time, we still get surprised by some of the results after blending lambikken, like this Golden Doesjel. While it was intended to be a Golden Blend, and despite the use of very potent jonge lambikken, the fermentation in the bottle did not continue. And it remained flat. This blend was made with lambikken from three barrels, originating from three brews with three different brewers (of which 50% 3 Fonteinen brewed lambik). A nice gentle sipper. 375 ml bottle//6% abv.

For this Druif/Kriek, we blended a Belgian dornfelder druivenlambik and a kriekenlambik in a 50/50 proportion. We used both young and two year old lambikken, originating from nine different barrels and nine different brews. The combined maceration took eight months and the final fruit intensity is 510 grams per litre of sour cherries and freshly pressed, skin-macerated grape juice. 750ml bottle//8.3% abv.
