Chimay Blue, also known as Grande Réserve, is a Belgian Quadrupel ale brewed by the Trappist monks at Scourmont Abbey in Chimay, Belgium. It's a strong, dark brown beer with an ABV of 9% and a creamy head. Chimay Blue has a complex, rich, and smooth taste with fruity and peppery notes, and hints of plum, raisin, and nutmeg. It also has aromas of fresh yeast, roasted malt, brown bread, molasses, and dark fruits. Some say the beer's flavor improves with age, and it can be aged for up to 15 years. Chimay Blue pairs well with soft rind cheese and can be enjoyed chilled but not cold, either on its own or aged for months or years.
