Bourbon Barrel Aged Breakfast StoutLate last year we blazed through an unexpected hit of a canned sweet stout release -- there were astronauts and maple syrup! There were grizzly bears and blueberries! There were DeLoreans! There was No Time to Explain! We've applied that absurdly delicious finishing treatment to a mix of Fundamental Observation barrels filled throughout 2018, 2019, and 2020, then blended with a chewy, lactose-based sweet stout for a liquid that can only rightly be called: More Time to Explain! Huge aromas of ripe blueberry and sweet maple syrup deliver waves of blueberry pancake-stuffed nostalgia. Bright blueberry opens the palate, then oaky vanilla from beans and barrel hit mid-palate, tempering the sweetness of a long, maple-rich finish. Lactose contributes a creamy mouthfeel on a velvety base that drinks like the Sunday morning of a three-day weekend.• 12.43% ABV •

After 14 months in barrels, we pushed this Imperial Stout through Guatemalan cacao nibs to further enhance its velvety, milk chocolate flavor and finished it with hundreds of pounds of toasted hazelnuts. A beautiful bite of vanilla-hued oak and a warming heat to exhale keep the rich legacy of these special barrels at the forefront of this Stasis Project release.• 14% ABV •

Rum Barrel Aged Imperial Tiki Stout •Notes of orange zest and nutmeg garnish aromatic waves of dark rum and tropical fruit, setting the tone for this Painkiller cocktail-inspired imperial stout.After eighteen months in Jamaican rum barrels, Broken Blender was pushed through three unique rounds of 300lbs of fresh coconut. The full-bodied sweetness of a cumulative 900lbs of coconut was tempered with 400lbs of sliced pineapple pieces for a vibrant tropical tang, then finished with a twist of orange zest and a dash of nutmeg.12.54% abv

Oreo-Inspired Bourbon Barrel Aged Imperial StoutAged for just over a year and finished through a baby-brite tank filled with 300lbs of Jet-Puffed marshmallows, over one hundred gallons of marshmallow fluff, and 300lbs of Oreo wafers. Fudgey chocolate and soft bitterness from the chocolate wafer cookies alight from a bouncy, medium-bodied base of marshmallow sweetness and settle on the palate with a richness that increases as the beer warms.14% abv

Details and Dialects is a Bourbon and Rye Whiskey Barrel Aged Peach Cobbler-inspired Strong Ale aged on Madagascar vanilla beans, then finished with Vietnamese cinnamon and mountains of fresh peaches. ⁣⁣Heirloom recipes are a type of dialect passed through time and bloodlines. Whether your sugared stone fruit and sweetened dough combine under the banner of a cobbler, a buckle, a sonker, a slump, a betty, a boot, or a pandowdy, the nuanced regional details weave an intricate tapestry for a dessert that stands as the herald of the summer season. 13.55% abv

3 Fonteinen Oude Geuze Cuvée Armand & Gaston is a blend of one-, two-, and three-year old traditional lambics, all brewed at Brouwerij 3 Fonteinen. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. This cuvée, like all of our lambic, is 100% natural, authentic, spontaneously fermented, and crafted with steadfast adherence to tradition, like Armand and Gaston Debelder have always done it. The Oude Gueuze Tilquin à l'ancienne is a blend of 1, 2 and 3 years old lambic refermented in bottle for at least 6 months. "Oude" in flemish or "à l'ancienne" in french is an appellation protected by the EU and is restricted for traditional belgian gueuze in bottle. 7% abv

Bourbon Barrel Aged Imperial Coffee StoutWe're thrilled to announce the release of the fifth bottled batch of our legendary RedEye November, a Stasis Project variant that features an exclusive blend of coffee beans masterfully roasted by our friends at Mostra Coffee.Flavors of dark fruit, baking chocolate, and caramelized sugar from El Salvadorian coffee beans meld with the spicy rye malt and bittersweet molasses of Darkstar November, our original barrel-aged beer. 13% abv

3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley! 6.6.%

A true blend of Colorado & Oregon in this collaboration with OMF Brewing. Brewed with Troubadour malts (CO) and Mecca Grade malts (OR), hopped with Nuggets from High Wire Hops (CO) and Mt. Hood hops from Crosby Hops (OR), and barrel fermented in French oak with a blend of OMF & Fort George mixed culture yeasts.After 16 months the beer was divided with half receiving Rainier cherries and the other half Brooks cherries. We also created a blend of the two, conditioned on Saigon cinnamon & Ugandan vanilla. A full two year project...much like waiting on the release of the new Dune movie. 7.6% abv

Oak-fermented and -aged Belgian Wit beer brewed with Indian coriander seed, chamomile flower, and local oranges and lemons. 5.4% abv

Scaredy Cat is a funky abbey-inspired brett pale ale that’s malty, fruity, and spicy. This copper-colored wild cat is made with Belgian malts and a blend of Mittelfruh, Blanc, Lemond Drop, Mosaic, and Nelson Sauvin Hops. Scaredy Cat was fermented with our house culture in oak foeders, for a refreshing twist on a Belgian classic.

An artisan amber ale brewed in the Flanders tradition. Deep amber with earthy caramel, spice, and sour fruit notes developed through natural barrel aging. Unfiltered, unpasteurized and blended from barrels ranging in age from two to ten months. 7.2%

This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer! 6% abv

A blend of Oud Beersel’s Kriek and New Belgium’s Golden Sour.Winner of a gold medal at the 2018 Great American Beer Festival, Transatlantique Kriek begins its life in oaken vessels of Gert Christiaens’ Oud Beersel, a 130-year-old lambic brewery in the Zenne valley of Belgium – home of authentic Lambic beer. After time spent aging in wood, Oud Beersel’s lambic is blended with tart Polish cherries and shipped across the Atlantic to New Belgium. In concert with Oud Beersel’s cherry lambic, or Kriek, we blend an equal portion of golden sour ale matured for 1 – 3 years in our oak vessels called foeders. 50% Sour Golden Ale blended with 50% Traditional Cherry Lambic Ale leads to an intense cherry nose, a sour flash across the palate and a refreshing, mouthwatering finish. 5.2% abv

Sour Dark Ale - Dark Ale aged in Cabernet Sauvignon barrels from local wineries for 8-12 months with black currants, Brettanomyces, Lactobacillus, and Pediococcus. Rich flavors of chocolate truffle, spice, tobacco, currants, and a bit of Cabernet. 10% abv

Barrel aged pilsner in sauvignon blanc barrels with sauvignon blanc grape juice and brettanomyces. 8.25% abv

100% Brett Fermented Ale - The base recipe for Sanctification is for a Blonde Ale, with primary fermentation done with 100% Brettanomyces. There is no Saccharomyces in this beer. It is dry and refreshing with notes of red apple, cider, and lemon along with green tea and white pepper. 4.8% abv

Sour Brown Ale - Brown ale aged in Pinot Noir barrels from local Sonoma County wineries. It is aged forabout 8-12 months with sour cherries, Brettanomyces, lactobacillus, and pediococcus added to each barrel.Flavors from the cherries, Pinot Noir, and oak balance each other nicely with a little funk from the Brett. 7% abv

Sour Blonde - Blonde ale aged in Chardonnay barrels from local wineries with Brettanomyces, Lactobacillus, and Pediococcus. Temptation was Vinnie’s first barrel aged beer, inspired by his travels abroad, specifically to Cantillon. Tomme Arthur suggested the name, continuing the theme that started with Damnationand Redemption. 7.0% abv

When we set out to make a rosé cider, we knew we wanted to pay homage to our friends in the winemaking world. Shacksbury Rosé earns its color from aging on grape skins, which brings added tannin and flavor to this cider. 5.5% abv

Our take on a true to style, classic Porter. No adjuncts in this beer, with lush notes of coffee and chocolate ALL coming from choice malts. This brew has been turning heads as of last year, earning a gold medal at the 2021 CA craft beer awards, and just recently, a silver medal at the 2022 World Beer Cup. 6.66% abv
