Located just under the diaphragm and in close proximity to the abdomen, it features a ferrous, mineral aroma and strong offally flavours. Its pure muscle and coarse fibres structure together with a lean fat content- ensure incomparable texture and full-bodied flavour. Oh, and why "butcher's cut"?
