Blaugies is a small family-owned craft brewery creating unfiltered beers, refermented in bottles or in casks. Stemming from a partnership with mythical Vermont brewery Hill Farmstead, this one is made with malt, spelt and American hops. It stands out with its substantial bitterness and its dry and subtly lemony finish.

Saison D’Epeautre is a saison beer made in a unique traditional style, using spelt and barley malt in the mash. Very dry and light in body, with a hint of wheaty tartness and a hardy texture.

This is Dovetail’s second season of Framboise. 2020 is a 13-barrel blend of spontaneously-fermented and traditionally-made beer from 2017 and 2018, that then spent 7 months on nearly 700kg of red raspberries.

Pomme 2020 is the latest release in our fruit spon series. This year we used a whopping total of 830 lbs of apples from Uncles Johns for this 8 barrel blend.

Part of our season of fruited spontaneous beers, Quetsche is 4-barrel blend from 2017, fermented in oak for 2 years, and transferred onto 225 kg of Italian plums for 5 months.

Copper in color, with a warm, malty character, it's made with 100% Vienna malt and Styrian Golding hops.

Brewed especially for baseball season, this Helles is the ultimate easy- to-drink beer.

This Dovetail version of Baltic Porter is based on the ones we love to pick up at the Polish delis on the West Side. It's our darkest lager; capped by a large stand of cream-colored foam to showcase deep and rich malt aromas of milk chocolate, raisins, and restrained coffee roast. Na Zdrowie!

This beer is dark with reddish tones and an off-white head with a rocky foam standing above the rim of the glass.

A smoked version of our Helles, hopped with Hersbrucker; using the yeast from our Rauchdopplebock to add a subtly smoked flavor.

For this specific Oude Geuze Golden Blend, we blended lambikken from three different barrels and five different brews. The brew consists of more than one third of 50-month old lambik. We also added one sherry barrel of 34-month old lambik. This way, the weighted average age of the blend upon bottling is 28 months. About one third of the 3 Fonteinen lambik was brewed with Pajot grown cereals. This is the same blend as the 31st, but with a different sherry barrel. Oude Geuze Golden Blend is a blend of one- to at least 25% four-year old lambics. Spontaneously fermented. Matured in oak barrels. Extended bottle ageing. Unfiltered. Unpasteurised. Bottles 03-03-2021

For this Hommage, we blended a kriekenlambik and a frambozenlambik in a forty-sixty proportion and with a final fruit intensity of 529 grams of fruit per litre of Hommage.

Bottling date: 11/03/2022. Nocturne is a spontaneously fermented full malt beer. Not your typical lambik beer, but our take on a Vlaams Oud Bruin. The beer was brewed with five different barley malts, from pilsner malt to dark roasted malts, and no wheat whatsoever. This batch was brewed in March 2018 with more dark chocolate malt, and put on barrels for four years before we blended it with a small portion of freshly brewed Nocturne. The weighted average age of this beer upon bottling is 45 months.

For this specific Oude Kriek, we macerated sour cherries with jonge lambikken from three different brews and from one and the same barrel, during six months on stainless steel.

Ondineke is an unfiltered golden blond beer with an alcohol content of 8.5%, without the addition of herbs. The brewer uses the only hop variety still grown in Aalst, namely Hallertau Mittelfrüh. The beer is named after Ondine, the main character of De Kapellekensbaan, a book by Louis Paul Boon. Ondineke is also the official city beer of Aalst and is offered at receptions in the city.

An unfiltered artisanal Belgian farmhouse ale with a zesty floral aroma, sweet lemon on the palate, & a lightly hopped floral bitterness on the dry, finish.

Our Pils is a beautiful representation of German pilsner malt and noble hops. This beer is for the drinker who prefers a little more hop presence with a subtle bite that dissipates smoothly into a depth of floral, herbal, and honey flavor.

One of our favorite lager styles of beer to brew for its malt complexity, yet infinite drinkability. Due to the double decoction method of brewing, we achieved a unique depth of malt flavor that is balanced by Czech Saaz hops.

The original Munich lager that was prolific throughout Bavaria long before the advent of lighter colored malted barley.This dark lager presents flavors of bread, biscuit, dark fruits and slight caramel.

Delightfully smoky on the nose at first, but as the palate adjusts to the smoke it gives way to malty and subtle floral notes. Initially pleasant malty sweetness is balanced by smoke and finishes dry. Each subsequent sip opens the palate to flavors of biscuits, bread, and toast.

A German-style Schwarzbier that drinks very light, but has a subtle roast finish. Highly drinkable in spite of its dark color.

This is a smooth, full bodied, malty lager. It has flavors of dark cherries, plums, and raisins. A great lager for the colder months. 

This dark, spontaneous beer is a cousin of Lambic. Inoculated by the nighttime air and ripened for 2 years in oak, it is tart, wine-like, and fruity. The Duivelsbier style was popular in the 1800’s and produced in the city of Halle in Belgium’s lambic country. The very last producer of the style, Van Der Linden, vanished 20 years ago. This may very well be the only beer of its kind in the world today! 6% ABV

The Open Work: Kriek is made with 100% New York-grown ingredients. With Balaton sour cherries from Samascott Orchards, barley and raw wheat from New York Craft Malt, our own house-aged hops and our local ambient microflora, this gently tart and complex spontaneous ale shows the best of our local terroir. Soft acidity, leathery brettanomyces, complex spice, and juicy tart cherries make for an American spontaneous ale that is as elegant as it is vivid.

Tree Tipper is the result of carefully considered combinations. Spruce tips with honey. Ingredient with process. We steeped spruce tips in locally sourced honey from The Hive Supply prior to adding both ingredients to the fermenting beer. This process allowed enzymes in the honey to transform some of the more aggressive, resinous compounds in the spruce tips into flavors and aromas that are more floral and fruity. Notes of green mango, toasted white bread, pineapple, cotton candy, maple sap and unripe strawberries lead to a delicate finish of spruce and tangerine zest. This version had our house blend of brettanomyces at bottling. It is funkier and more complex than the base version and will continue to evolve for a long time to come. 2024 Release.

Le Bizon is a collaboration with our friends at Goldfinger and an homage to the flavors of Poland. It was hopped with Polish varieties Izabella and Oktawia and whirlpooled with dried bison grass for aromas and flavors of vanilla, baking spices, honeydew, fresh cucumber, dried lime, and white pepper with a well structured and lightly acidic finish. A great pairing for dense rye bread covered in butter and pickled herring, or chased with a pickled cucumber. Bottle conditioned w/ Brettanomyces.

The base chocolate dark ale here is smooth, full of rich dark chocolate and notes of plum and raisin. A caramel malt character works as a through line connecting the fruit and chocolate.

Le Merle is a rustic ale, pale in color, inspired by the rich brewing traditions of the Flanders region. Abundant hops and a Belgian yeast strain contribute exotic aromas of tropical fruit. For all she has contributed since the brewery’s founding, North Coast Brewing is pleased to honor our Merle, Brewmaster Mark Ruedrich’s wife, with Le Merle (the Blackbird), a subtle sophisticated Belgian-style Saison beer.

Like a fine port, Old Stock Ale is intended to be laid down. With an original gravity of over 1.100 and a generous hopping rate, Old Stock Ale is well-designed to round out and mellow with age. It’s brewed with classic Maris Otter malt and Fuggles and East Kent Goldings hops, all imported from England.

Aecht Schlenkerla Urbock is the complex sibling of the classic Märzen smokebeer. Exactly like the classic all its barley malts are smoked over beech wood logs. Its higher smokemalt concentration and longer maturation in the 700 year old cellars underneath Bramburg create a taste profile of most intense smokiness beautifully balanced with deep malt sweetness.

Schlenkerla Smokebeer Wheat is an ale with light smoky aroma. As Bavarian wheat beers, it is being brewed with a mixture of both barley malt and wheat malt. The portion of barley malt is hereby a classic Schlenkerla smokemalt, while the wheat malt remains unsmoked. Served unfiltered with its natural haziness, Schlenkerla Wheat reaches its full aroma through bottle fermentation with fine top fermenting yeast.

“Schlenkerla Helles” is brewed with fine Bavarian aroma hops from the area around the city of Nürnberg. It's lagered in century old caves underneath the historic Schlenkerla brewery and maltings. Schlenkerla Helles is boiled in the same copper kettles and bottom fermented by the same yeast as the historic Schlenkerla Smokebeer. Its subtle smokiness without using smoke malt makes “Helles Schlenkerla Lager” a unique representative of the classic lager beer style “Bavarian Helles”.

Porter the way it was in the nineteenth century, brewed with chocolate malt and finishing lightly tart, similar to a Rodenbach, though slightly less acidic. Brewed with a touch of fig leaves for added baking spice character. A unique beer with a finish reminiscent of chocolate covered cherries.

Northern European-inspired dark beer mashed in an oak puncheon through a bed of juniper branches. Brewed over a wood fire in our copper kettle with additional juniper branches. Rich malt bill with notes of chocolate, roasted coffee, and piney finish.

Crisp and clean with caramel malts and spicy notes from the rye that are complemented by strong citrus and tropical fruit notes from dry hopping.

This Belgian dark strong was aged in Four Roses Bourbon barrels and has notes of dark dried fruit.

Born from the mystery spinning in Willett Bourbon barrels, an out-of-this-world experience in a can. Rich and dark Imperial Stout plus notes of vanilla, toffee, and dark berry flavors from the barrels, with a smooth and warming finish.

The delicate spicy champagne aromas of this thirst-quenching blonde beauty are quickly followed by a bracing rush of whole fresh hops.

Bright shiny rose in color. Fantastic fresh floral notes fill the glass; the Crispin aromas especially stand out with fine hints of yeast. There is a nice CO2 mousse, making it very pleasant and playful.

Originally brewed as a Christmas beer in 1948, this dark ale has rich flavors of mulling spices and caramel, with a smooth palate and warming finish.

This copper-colored ale boasts flavors of apricots, brown sugar and nutmeg. Brewed since 1982, Chimay Première is the first beer ever produced by the Trappist monks of Notre-Dame de Scourmont Abbey in Belgium.

Tynt Meadow is mahogany-coloured, with a subtle, warm red hue, and a lasting beige head. Its aroma carries hints of dark chocolate, liquorice, and rich fruit flavours. The beer is full-bodied, gently balancing the taste of dark chocolate, pepper, and fig. It leaves a warm and dry finish on the palate.

Orval beer is a high fermentation beer. The ageing process adds a fruity note, which strikes a subtle balance between the beer’s full-bodied yet complex flavour and bitterness. The beer was first brewed in 1931 and owes its unparalleled taste to the quality of the water, the hops and the yeast used. The brewery has selected very aromatic and unique hop varieties, which hark back to the first brewmaster of Orval, who hailed from Bavaria. The beer’s aromas are very pronounced while maintaining the right level of bitterness thanks to the English method of dry hopping. The various stages of fermentation – combined fermentation with the original yeast and with wild yeast, followed by fermentation in the bottle – mean the beer must age for some time and requires numerous quality controls.

Reddish-brown color with amber-gold highlights; soft body leads to earthy flavors and an herbal character. Refined, soft spiciness in the bouquet finishes with a bit of caramel. Bottle-conditioned for soft natural carbonation.

Deep brown color; the flavor is vigorous and complex, with firm body to support the strength. The aroma has elusive notes of fresh fruit, spice, leather, and figs.

Aroma and taste show the Rochefort signature layered, rich depth with elusive honey and spice accents. Color is deep gold with amber highlights, and the body is fairly light for a beer of this strength. Superbly complex, this expands the boundaries of the style.

Westmalle Dubbel (7%) is a dark red-brown beer with a rich, complex taste thanks to re-fermentation in the bottle. You pick up touches of caramel, malt and fruity esters reminiscent of ripe banana. The beer pearls beneath a covering of dense, cream-coloured froth. A lovely lace pattern forms on the inside of the glass once emptied. The long, dry finish of this balanced, mild Trappist beer will stay with you. In 1865 the monks of Westmalle started brewing a dark Trappist beer in addition to their table beer. They adjusted the recipe in 1926, doubling the amounts of raw ingredients to produce a new, stronger beer. Dubbel is a logical name for this doubled beer, though it is more often simply called ‘Trappist’. To this day, the 1926 recipe is the basis for Westmalle Dubbel.

This is one of the oldest beers of Westmalle Abbey, with a tradition that dates back to the start of our brewery. It was created to drink with meals in the abbey, something the monks still do today. As a top fermented golden yellow Trappist beer, the Extra is unique in combining a low alcohol content (4.8%) with a rich flavour. Enjoy its fruity notes and its refreshing, thirst-quenching character.

Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. This beer holds up well in the bottle over time and seems to soften with age.

A beer that the abbey describes as ‘slightly unruly’ – Trappist 8 is a beer you must take time to savor and understand. Chestnut-colored and bottle-conditioned, with aroma of caramel, herbs and spices; initially floral and slightly sweet; character develops from light caramel to a lovely, dry, mellow hoppy bitterness as the flavor opens. Brewed within the walls of Zundert Trappist Monastery by the monks of the abbey.

Brilliant amber beer. A "half" Trappist; brewed by the monks of Chimay (actually in Scourmont, Belgium) for their fellow French Trappist monks of L’Abbaye du Mont des Cats in Godewaersvelde, France.

Brewed only once a year on December 6th, Samichlaus is aged for 10 months before bottling. Serve with hardy robust dishes and desserts, in particular with chocolates, or as an after dinner drink by itself.

The classic Gaffel Kölsch is a particularly fresh Cologne beer specialty, brewed with water, malt and hop extract according to the tried and tested family formula and the German Purity Law of 1516. The fine, pleasant, slightly hopped flavor is characteristic of this traditional product.

First brewed in 1865 in Minnesota, the Land of Sky Blue Waters, Hamm's uses water best for brewing, as well as the choicest barley malt, grain, and hops.

The Weltenburger Asam Bock owes its name to the ingenious, baroque painter and master builder Cosmas Damian Asam. The malt-accented Bock exudes light roasted aromas that suggest a coffee note. Friends and connoisseurs appreciate it especially because of its strong-sweet, very aromatic and lasting taste until the end. With its 6.9% alcohol content, it is the strongest barley juice from the Weltenburger family.

Lion stout (Sinha Stout) is brewed in Sri Lanka (Ceylon) and has a heritage dating back to 1881. It is a traditional stout with a blend of chocolate, coffee and toffee flavours. It has an extraordinary chocolate, mocha liqueur like character. The 8.8% beer is brewed from British, Czech, and Danish malts with Styrian hops and an English yeast strain. All the ingredients are transported along precarious roads to the brewery located 3,500 feet above sea level.

An intensely satisfying full bodied beer, McEwan’s Scotch Ale has sweet aromas of caramel, toffee, malt bread and dried fruit.

Light bodied, without sacrificing a drinkable body. Refreshing and dry, but with enough character and hoppy bite to give it some taste. Yeast is reminiscent of those big Mexican macro beers, only tastier. Brewed in Chicago by Pilot Project.

It is called the "model of meter" among beers. All other pilsners are a better or worse attempt to copy the original - the first ever Pilsner Urquell.

Unique piney and grapefruit aromas from the use of whole-cone American hops have fascinated beer drinkers for decades and made this beer a classic.

Born in the heart of Mexico in 1906. It’s considered Mexico’s oldest beer. Smooth, frothy, light to medium body, offering flavors of toasted malt, tangy apple butter, and star fruit. Slight malt sweetness is perfectly balanced by crisp finish.

The Scaldis Noël derives much of its rounded character from the use of roast caramel malts. The hops are carefully balanced with these, added in just the right proportions to develops its subtle hop aroma. There is also a robust fruity character, with the overall taste pleasingly consistent.

Brewed in the tradition of Swedish Glogg. Ale brewed with figs, orange peels, cardamom, cinnamon, clove, and ginger root.

Brewed at the Weltenburger Monastery, which was founded in 45 AD, with the brewery established in 1050. This is the world's oldest dark beer. A true experience of flavour. Full bodied, with fine malt aromas. Slightly bitter with some sweetness, creamy and with the warm colours of amber, intensive flavour and fragrance. Brewed in the traditional monastic manner, it's regarded as one of the great beers.

De Dulle Teve is brewed in the tradition of a Belgian Triple. Its high density stems from large amounts of pale malt increased with pale candi sugar in the brew kettle. Unfiltered, unpasteurized, bottle-conditioned. De Dulle Teve keeps two to three years without major changes in taste. Further maturing, up to 10 years, will cause it to darken a little and lose some of its bitterness. The bittering of about 30 IBU is due to Goldings hops in the brew kettle.

Seipp’s Extra Pale is a pre-prohibition pilsner. It is full bodied, clean, and crisp with noticeable hop bitterness balancing a slightly sweet malt roundness.

A German-style Bock. Malt forward with a rich body and dry finish. Light and peppery with notes of vanilla bean. Brewed in the 19th century, and now in the 21st, to honor the perseverance of our city, and the people that love it.

A traditional Hefeweizen. Light golden color with a balance of clove and banana aromas, backed by subtle soft wheat bread, and a hint of hops. Medium body with refreshing light crisp finish. Pure summertime enjoyment!

This Belgian Strong ale is a rusty brown color and exhibits heavy aromas of fruits, including figs and dark cherries.

We first began brewing Oakspire in 2018 as a special release around the Holidays and it has since become a fan favorite. In 2024, we're thrilled to partner with Four Roses Distillery again, known for their smooth, fruit forward and slightly spicy bourbons.

One of Michael Jackson’s 500 Classic Brews. Carnegie Porter was brewed for the first time in 1836 and tastes the same today as it did then. Carnegie Porter has a creamy head with a scent of coffee. Its sweet and well rounded flavor is balanced by the bitterness of the hops. Storage helps the flavor mature and enhances its harmony.

Sinebrychoff Porter is a dark unfiltered beer manufactured by using top fermentation. Munich malts and plenty of hops impart a strong flavour to the beer.

Wölffer No. 139 Brut Cuvée Cider combines the perfectly bubbly ciders you have come to love, with a celebratory twist. Using 16 different varieties of apples combined in this cider, the different flavors, textures and aromas provides depth and interest to this elegant, vibrant, balanced and fruit-driven cider. 

Bright shiny rose in color. Fantastic fresh floral notes fill the glass; the Crispin aromas especially stand out with fine hints of yeast. The mouth-feel is pure and clean, with a nice balance of sweet fruit, elegant acidity and fine tannins that provide a long and pleasant finish. There is a nice CO2 mousse, making it very pleasant and playful.

Clear shiny pale yellow in color. Beautiful fresh apple aromas and fine hints of yeast fill the glass. The mouth-feel is elegant with a wonderful light structure and the perfect balance of fruit, vibrant acidity, soft tannins, and a little residual sugar, all magnified by a playful CO2 fizz. The finish is delicate and lively with a refreshing aftertaste. This is cider at its best!
