      For this specific Oude Geuze Golden Blend, we blended lambikken from three different barrels and five different brews. The brew consists of more than one third of 50-month old lambik. We also added one sherry barrel of 34-month old lambik. This way, the weighted average age of the blend upon bottling is 28 months. About one third of the 3 Fonteinen lambik was brewed with Pajot grown cereals. This is the same blend as the 31st, but with a different sherry barrel. Oude Geuze Golden Blend is a blend of one- to at least 25% four-year old lambics. Spontaneously fermented. Matured in oak barrels. Extended bottle ageing. Unfiltered. Unpasteurised.       Bottling date: 11/03/2022. Nocturne is a spontaneously fermented full malt beer. Not your typical lambik beer, but our take on a Vlaams Oud Bruin. The beer was brewed with five different barley malts, from pilsner malt to dark roasted malts, and no wheat whatsoever. This batch was brewed in March 2018 with more dark chocolate malt, and put on barrels for four years before we blended it with a small portion of freshly brewed Nocturne. The weighted average age of this beer upon bottling is 45 months.

      The beer has been brewed since 2005 at De Glazen Toren Brewery in Mere in the municipality of Erpe-Mere. It is a straw blond wheat beer with an alcohol content of 7%. The beer is named after the eighteenth-century crook Jan de Lichte from Velzeke. The book The Gang of Jan de Lichte by Louis Paul Boon is inspired by this robber.

The brewer uses the only hop variety still grown in Aalst, namely Hallertau Mittelfrüh. The beer is named after Ondine, the main character of De Kapellekensbaan, a book by Louis Paul Boon. Ondineke is also the official city beer of Aalst and is offered at receptions in the city.

      Tree Tipper is the result of carefully considered combinations. Spruce tips with honey. Ingredient with process. We steeped spruce tips in locally sourced honey from The Hive Supply prior to adding both ingredients to the fermenting beer. This process allowed enzymes in the honey to transform some of the more aggressive, resinous compounds in the spruce tips into flavors and aromas that are more floral and fruity. Notes of green mango, toasted white bread, pineapple, cotton candy, maple sap and unripe strawberries lead to a delicate finish of spruce and tangerine zest. This version had our house blend of brettanomyces at bottling. It is funkier and more complex than the base version and will continue to evolve for a long time to come. 2024 Release.

      Westmalle Dubbel (7%) is a dark red-brown beer with a rich, complex taste thanks to re-fermentation in the bottle. You pick up touches of caramel, malt and fruity esters reminiscent of ripe banana. The beer pearls beneath a covering of dense, cream-coloured froth. A lovely lace pattern forms on the inside of the glass once emptied. The long, dry finish of this balanced, mild Trappist beer will stay with you. In 1865 the monks of Westmalle started brewing a dark Trappist beer in addition to their table beer. They adjusted the recipe in 1926, doubling the amounts of raw ingredients to produce a new, stronger beer. Dubbel is a logical name for this doubled beer, though it is more often simply called ‘Trappist’. To this day, the 1926 recipe is the basis for Westmalle Dubbel.

Further maturing, up to 10 years, will cause it to darken a little and lose some of its bitterness. The bittering of about 30 IBU is due to Goldings hops in the brew kettle.
