      Brazil Salmo Plus Natural\n\nSalmo Plus Natural coffee from Brazil is a Genuine Origin crowd favorite and easily our most versatile coffee. Salmo offers coffee roasters a classic Brazil cup profile, with notes of milk chocolate, golden raisin, and roasted peanuts that will leave drinkers with the impression of a Reese’s peanut butter cup in the mug. Coupled with a gentle but balanced acidity and a light body, Salmo meets all the expectations of a delicious Brazilian coffee.\n\n \n\nSalmo is a blend of Cerrado region coffees, purchased at farm gate from a select group of producers. The coffee was then processed and prepared for export by Volcafe Santos, our sister company in Brazil, at their facility in Varginha, Minas Gerais.

      The Valle del Cauca is a critical swatch of land where natural resources, water management, and friendly environmental practices are keenly preserved by those who live and farm there. As one of Colombia’s two main biological conservation corridors, Cauca Valley is home to World Heritage-listed national parks, wildlife, and water sources that give life to the surrounding land.\n\n \n\nThe region lies between the National Park of Tatama and “Serrania de los Paraguas”, a recognized Coffee Cultural Landscape and UNESCO World Heritage Site where producers and organizations are committed to agroecology farming and community-based ecotourism. The altitude spans 1,700 to 2,100masl, and the surrounding mountains enclose the valley in a stable microclimate all year round.\n\n \n\nSugarcane Decaf Process\n\nSugarcane is readily available in Colombia, and its application to the coffee industry was a game-changer. Ethyl acetate is an organic compound found in sugarcane, and the decaffeination process begins with the fermentation of molasses derived from sugarcane to create ethanol. This alcohol is then mixed with acetic acid (the main component of vinegar) to create the compound ethyl acetate.\n\n \n\nIn a direct solvent-based process, low-pressure steam opens the pores of the coffee beans. Then the beans are soaked in a solution of water and ethyl acetate. The solvent binds to the salts of chlorogenic acids and allows the removal of caffeine. After flushing the beans with ethyl acetate repeatedly, up to 97% of the caffeine is extracted. Because ethyl acetate comes from sugarcane and is an organic compound that can effectively remove caffeine, the coffee’s flavor attributes are not extracted.       Los Huipiles Guatemalan Coffee\n\nHuehuetenango farms sit high in the mountains ranging from 5,000 – 6,500 feet (2,000masl). This renowned region owes much to the dry, hot winds that come in from the mountains of Mexico’s Tehuantepec plain. The additional heat layers protect Huehuetenango from frost and enable coffee to grow at dizzying heights. The fact that Huehuetenango farms are so high up and remote means that producers must often set up their own micro-mills. Fortunately, Huehuetenango is also blessed with numerous rivers that facilitate washed-process coffee. \n\n \n\nThe Huipiles regional blend is a showcase that encapsulates the rich, complex flavors signature of the Huehuetenango Department. Many small communities coexist here, each with its own traditions that are reflected in its huipil design, a traditional garment with multiple panels stitched together. Each embroidered pattern is geography-specific, and the complexities of these designs are represented in the Huipiles regional blend. In the cup, a medium body with medium acidity is highlighted by sweet and aromatic notes of milk chocolate, vanilla, brown spices, pear, and pecan
