      About the Fruit Blenheim’s hail from Europe about 200 years ago, flourishing in the garden at Blenheim Palace in England (birthplace of Winston Churchill!); they became U.S. imports in the 1880’s, arriving in California and spiking in production during WWI until a halting of imported dried fruit from Europe mobilized Sacramento and Santa Clara valleys to begin growing hefty amounts of them. Today, Blenheim production is quickly decreasing by the thousands do to the uprooting of trees to make room for commercial development; additionally, due to their minuscule shelf life, major chain grocery stores more than often opt for the more shelf-stable varietals of apricots.

      The “Bing” cultivar was derived in 1875 from a cross between one of our favorite varieties, the Black Republican, and the sweet forward, Royal Ann. History is not in agreement as to who is fully responsible for the development—some say it is both the horticulturist, Seth Lewelling, and his Manchurian Chinese foreman, Ah Bing. Others believe it could have been Ah Bing himself, while others say Leweling named the fruit in Bing’s honor due to his long service as his orchard foreman. Origins: What a wonderful, bright yet purpled, plump cherry. Jessica’s not sure why she hasn’t used the fruit until this year—her only thought being that is as popular as it is prolific and it couldn’t be as great as everyone says it is. Can you believe that 100 lbs of grapes will yield only 96 jars of jam? Dawn Birch says this is their most flavorful crop yet and she’s right. They’re bursting with iconic grape flavor! We first hand-deskin; we then slightly warm the fruit and press through a sieve to remove the seeds, only to be married back with the skins and sugar and then cooked down to create a thick jelly-like consistency that is whole fruit.       Every year a British man named John Mattingly calls me to say that his Sevilles are ready to be picked. He has THE ONLY Sevilles in Southern California. We drove to John's House, as we've done for the last 5 years - and John greets us in, what appears to be, the same pair of sweatpants / plaid shirt tucked into them combo that we've seen in years past. John also sports a handlebar mustache thick enough to be a contender at the World Beard and Mustache Championships. We all go over to the tree, and using the pickers and baskets, we muscle the 100 pounds or so off the tree by throwing them into the pool (where they wash) followed by a removal by pool skimming. It's a process just to get them to Sqirl so imagine what the 2 day process is for making the jam....! We don't have much. If you're into traditional marmalades, here's an excellent example of one.

    • Organic Cara Cara Orange Vanilla Jam

      This jam is an eccentric ‘creamsicle': Cara Cara Orange + Vanilla Bean. It may not seem like that strange of a fruit or marmalade, yet the first Cara Cara was discovered at the Hacienda Caracara in Valencia, Venezuela in 1976 and is believed to have developed as a spontaneous bud mutation on a Washington naval orange tree. The Cara Cara is a mutation that botanists call bud sport. In botany, a bud sport is a part of a plant that shows morphological differences from the rest of the plant. The cause for these fantastic freaks is generally thought to be a chance genetic mutation. So thank your lucky stars that a Navel orange tree in Venezuela got a little freaky back in 1976, or else we wouldn't have been able to fold organic vanilla bean into these complex floral-forward beauties from Rancho Del Sol farms, and deliver it to you in a little glass jar.

Origins Even with praise from Alice Waters and Martha Stewart this pear is rarely grown and the only folks we've been able to get this pear from is Frog Hollow. We got Farmer Al to send down a shipping container this year of both the rare Warren Pear and his entire Quince crop. Folding in our seasonal spice blend, the pinkish-hued Pear and Quince Butter and deliciously fall. About the Fruit The Mirabelle varietal is a specialty of the French region of Lorraine, which has an ideal climate and soil composition for the cultivation of this fruit; it known as the perfect jamming plum, as it is sweet and tiny, and often baked into pies and cakes. Origins Andy of Andy’s Orchards, who also grows Reine Claudes, grows a minuscule number of Mirabelles (de Nancy), and they make a gorgeous jam. In France, 70% of commercial production goes to make a rich plum jam, but here in the states it's impossible to find….except right here!       Viscous, jolly rancher, holy. About the Fruit This complex hybrid plum has roots in Japan, but was ultimately bred in 1906 by Luther Burbank, a California horticulturist known for developing over 800 varieties of plants! Origins While we used to get our Santa Rosas from Flora Bella (RIP our favorite trees!), and then we procured a little from Andy’s Orchard last year, we were able to get a good amount this year from Ken’s Top Notch who grows a ton of wonderful stone fruit varieties! With hardly any shelf life, we immediately cook them in jam pans with flowering thyme because they’re both vibrant at the same point in time—so why not have a conversation. “Holy stone fruit!     • Reine Claude Greengage Plum Jam

      Bright flesh, dreamy, saccharine. About the Fruit David Karp brought the true Greengage over from Europe and planted an orchard of its trees at Andy's Orchards around six years ago. Before that time, this fruit was not to be found in America! Now Andy’s has the largest Rein Claude plot in the country. Rein Claude Greengages are the traditional French plum used for jams, tarts, and eau de vie. Origins Whenever Reinclaudes come into season, especially in Paris, there's an immediate frenzy, making them almost impossible to nab. Lucky for us, our kind farmer-friends at the very Andy Orchards give us the first pick of the season! The quantity we received this year was very small, so we only have a limited number of cases—and the jam itself is exquisite.       Nearly 850 smallholder family farmers surrounding the Werka village deliver freshly picked coffee to Testi’s Nensebo washing station in the Nensebo district, located in the West Arsi zone. Each farmer has an average of 2-5 hectares of certified organic coffee. In the washed processing, cherries are depulped within 8 hours of picking to avoid any natural fermentation. The mucilage covered coffee is allowed to ferment in water for 36 to 48 hours in the fermentation tanks, depending on the weather conditions. Once the fermentation is completed, the coffee is put through canals by moving water and manually cleaned by staff until all of the mucilage is removed and the running water is crystal clear. After fully washing, the parchment coffee is laid out to dry on raised beds under parabolic shade for 5-7 days until the moisture content comes down to 11 to 12%. The perfect growing conditions, and attention to detail all come together to produce a beautifully unique cup.
