Chef Pablo Peñalosa presents a global perspective at SkyFire that ties in the techniques and flavors discovered during his time working in renowned kitchens in Mexico and Spain, while nurturing and honoring the connection between the New Mexican land, ingredients, makers and farmers in a purposeful way.
