Gajrela, also known as Carrot Kheer, is a traditional Punjabi dessert made from grated carrots, milk, sugar, and ghee. The dish is prepared by sautéing grated carrots in ghee until they become tender and release their natural sweetness. Then, milk is added to the pan, and the mixture is simmered on low heat until the milk thickens and the flavors blend together. Sugar is added to sweeten the dessert. This has more rice pudding type of consistency.
