It's back back back back back; HEY CHICAGO WADDYA SAY?!  A beer brewed for beer lovers and baseball lovers.  This brew is a completely crushable German Style Helles and we have really hit it out of the park on this batch.  Aromas of fresh baked bread, a little bit of fruit and flower rise through the fluffy head of foam.  Sweet, malty flavors bubble up with the carbonation and finish with just enough bitterness and a clean mouthfeel.

Golden-honey in appearance with a thick head of foam, Exiled Angel - a Belgian Golden Strong, explodes with true Belgian ale complexity. Fruit, honey, bubblegum, peppercorn, and spice notes all join together to provide each drinker a unique flavor experience. It’s well-carbonated, medium-bodied, and finishes dry; seducing you back to the glass for another drink. Fermented in our open fermenter with just the four main brewing ingredients – it’s hard to imagine how those little devilish, single-cell organisms create such wonder and beauty. Santé. Now in a newly designed 12 oz can!

We used floor malted bohemian pilsner malt from Weyermann to give this beer a special character and an extraordinary flavor that you won't find in anywhere else. The beer aged for over six weeks with a portion of time on American Oak to further enhance its flavor profile. Slightly sweet notes of toasted biscuit, hints of lemongrass and a transition of honey to black tea all finishing off with a touch of wood.

The best laid plans of mice and men often go astray but it's a good thing that we have BLEUPRINT to guide us! Introducing our newest creation, a Blueberry Blackberry Wheat Ale; using Exiled Angel yeast we created a Wheat Ale punched up with copious amounts of blueberries and blackberries. Beautiful big berry aroma, colored blueish purple with flavors of sweet blueberry and tart blackberry with a nice Belgian base and a rich mouthfeel thanks to the lactose all topped with a pink head of foam.

Hipsters - the connoisseurs of counterculture and anti-industrialism. A tribe that values time honing their craft and sharing their passion with others, not just toiling away at work to make a buck. They're recognized by their vintage tees, beards, trucker hats, indie-alternative-folk music, beanies, and skinny jeans - driving beer choices and rescuing beer styles on life support. One such style, the American Cream Ale, is making a resurgence. Ours is pale-straw, well-carbonated and balanced, with a biscuity malt sweetness and whisper of citrus notes. We mash-in cracked corn with malted barley, and ferment it in our open fermenter to give the beer its crisp, signature flavor - just begging for another drink. Because this beer is brewed in an area still dotted with farms and ranches, we felt it was more appropriate to name this beer after Hipster's country cousin - Hickster. Skinny, tight fitting - no, never. Loose, relaxed, husky. Yeah - that's it.

Distinctive wheat malt, unique yeast, and an uncharacteristic appearance makes HEFE 'N IT an extremely unique brew. The yeast is the true star in this beer, giving it banana aromas with clove spice backgrounds. Those aromas of the banana are not overpowering and meld beautifully with the sweet malt; you'll be licking your lips before they touch the glass. The malty flavors give way to a subtle clove spice at the end. Full bodied, refreshing, hazy with a rich head of foam; truly a beer for beer lovers and those looking for that introduction into beer.

Our Doppelbock, brewed in a traditional German style process with added malty aroma and flavors, will satisfy your lager craving. Doppel meaning "double," this larger, fuller style "bock" beer attributes its name to a subtle language difference in pronunciation of beer between North and South Germany that the Bavarians misconstrued as "ein bock" or billy goat. This style was originally brewed by monks in Munich and is very food-friendly and rich in melanoidins. With a malty, toasty, dried fruit aroma and flavor at the front and light caramel and sweet chocolate in the back, this full-bodied and delicious beer has a finish that keeps you wanting more!

A rich, chocolatey, Robust Porter. It pours like the perfect shot of espresso, dark and rich, with a creamy head. The smooth caramel body softly balances the chocolate coffee-like notes. You'll be surprised how smooth this beer really is. So, put down your lamp, take off your helmet and enjoy this beer. Surely its robust enough for the toughest Coalminer.

Craft beer's success is a David and Goliath story. Armed with a creative force, faith in American curiosity, and sheer grit, craft breweries ignored the naysayers and brewed beyond guidelines to combat the bland, lagering beer giants. The hop became their revolutionary symbol and the IPA their weapon for destruction. Giant Killer IPA is brewed with the same spirit and determination - a lupulin gladiator; brave, bold, and exploding with hop juice!

Our Imperial Pumpkin Porter is a dark and mysterious concoction that is filled with dark rich chocolate, coffee notes, with pumpkin and spice flavors. The decadence and depth of the beer slowly reveals itself as the beer warms; the pumpkin and spice melt through the richness of the chocolate to show the many layers that CRYPT KEEPER has. One sip and CRYPT KEEPER will grab hold of you, and never let go.

We are excited to do a barrel aged release especially this one- BRETT ANGEL. A Belgian Style Golden Ale that was aged with brettanomyces (yeast). The beautiful rich golden color of this beer isn't the only thing that makes it so appealing. Fresh tropical aromas and those of cider with guava and finishing off with notes of Exiled Angel will have you forming a small smile when you breathe them in. Flavors of bright apple, pineapple, tropical finish off with a farmhouse breath. The beer is smooth and balanced with a dry finish.

Barrel 77 is a Flemish Style Red Ale that we added locally harvested Frontenac grapes to for a distinctive hint of fruity & berry character. The beautiful layers of raspberry, blackberry, dark cherry & plum from the grapes, along with the malty base of the ale, compliment the bright acidity & mild earthiness from the souring bacteria & wild yeast perfectly.

The beer was fermented for over a year in wine barrels from J's Vineyard & Winery in California's scenic Russian River Valley in Sonoma County, with their existing mixed Brett culture, as well as with the cultures native to the La Crescent grape skins. Barrel #21 is fruity and floral, reminiscent of a Moscato wine style, with stone fruit, peach, pineapple, and peppery notes along with an underlying Brett character and dry finish.

Barrel #24 is a variant of Barrel #22, a Farmhouse Saison with St. Pepin grapes from our family vineyard in Marengo, IL. Rather than bottle conditioning it with dextrose or a fruit juice of some kind, this beer was bottled conditioned with rose water and honey, creating a unique floral wine experience.

Barrel #76 is a Flanders Style Red featuring a blend of Barrel #71, Montmorency cherry and a touch of vanilla.

This barrel-aged sour beer features St. Pepin grapes from our family vineyard in Marengo, Illinois, that were harvested, destemmed and crushed. The grapes were then added into wine casks from J’s Vineyard & Winery, located in California’s scenic Russian River Valley in Sonoma County, along with freshly filled Belgian style Saison. The beer was fermented for over a year in the barrels existing mixed Brett culture, along with the cultures native to the St. Pepin grape skins. St. Pepin grapes, originally bred in Osceola, Wisconsin, are white grapes known to produce Riesling type and ice wine styles. Barrel #22 is reminiscent of a Muscat or Riesling wine, delightfully complex with clover honey and graham cracker notes and terrific grape character, along with some earthy, bleu cheese tones from the mixed cultures. The overall acidity is relatively low.Try Barrel #22 side-by-side with Barrel #21 which features La Crescent grapes, our vineyard's other white grape, for an exciting sensory experience. Barrel #23 is a blend of both La Crescent and St. Pepin grapes. It received a Silver medal at the 2017 L.A. International Beer Competition.

We brewed a farmhouse Saison and then fermented in our open fermenter. It was later transferred directly into our wine barrels along with La Crescent grapes. When it came time to discuss a new grape beer creation, the idea of a Bellini style beer was suggested fortuitously by the wife of one of our brewing team members. Excited by the idea, we brought in peach and apricot puree and blended it in stainless with the Farmhouse ale. Barrel #11 is the final result. It has been purposefully bottle conditioned to high, sparkling carbonation levels -- perfect to serve at any special occasion.

Flanders-Style Red– sometimes referred to as the “Burgundies of Belgium” – are all styles featuring blends of specialty malts and mixed cultures of yeast and microorganisms like Brettanomyces, Pediococcus and Lactobacillus. Our sour red ale has cherry and berry fruit notes with some tart acidity and dryness, that red wine drinkers are sure to enjoy.

The climb to the top is hard but the view is worth it. The crisp mountain air rushes by you as you open our barrel-aged DOPPELBOCK; using rye whiskey barrels from Koval Distillery right here in Chicago we barrel-aged our GABF award winning German Style Doppelbock.  The aromas of the sweet malt and rye whiskey blend perfectly together while the flavors of caramel and dark fruit mix with the rye whiskey and barrel notes with an incredibly smooth finish.

LEELOO is the fifth bottle in our series of bottle releases this year that feature strong female characters in literature and pop culture. This impressive Imperial Stout spent two full years barrel aging in Tawny Port wine barrels, with another year of extended aging. The result is an incredibly smooth, dark stout loaded with depth and balance between the beer and the barrel characteristics.  Rich chocolate aromas blend with those of the Tawny Port with hints of berry and sweetness. Flavors of dark chocolate, notes of berry and sweet plum with a noticeable port finish. You'll find yourself going back again and again for sips as the beer has a dark wine-like complexity opening itself up in every sip.  Dark, thick and viscous and full of wonderment she drinks silky smooth as it is a low carbonation beer best served at 45 to 50 degrees and meant to be enjoyed slowly (think of it like a Tawny Port).  Harness the power of this fifth Imperial Stout bottle release.

Koelspring is a spontaneously fermented ale, meeting the Méthode Traditionnelle standards adopted by a group of brewers designed to refer to spontaneously fermented beers that are made in accordance with and inspired by Belgian "Lambic" or "Gueze" styles; ales that must use a turbid mash, long boil, unmalted/raw wheat, aged hops, cooled in an open top coolship, spontaneously fermented in oak, and bottle conditioned, among other things 😀 This particular single-year blend was uniquely created in the Spring of 2018 by cooling wort outside in our family vineyard in Marengo. It was fermented and aged until January 2020, where it was bottled conditioned under cork and later crowned. Its release today means this Koelspring vintage took two and a half years to travel from coolship to your glass.Koelspring is a rustic pale gold color with an initial medium, mousy head. It's reminiscent of a Pinot Grigio white wine, with a crisp, zesty green apple character. It's dry and refreshing, exuding a light, complex floral or honeysuckle note to the overall beer. Like it's wine comparison, Koelspring should be served at 45 F to retain it's effervescence and dry fruity character.

This impressive Imperial Stout spent two full years barrel aging in Mezcal Reposado barrels, with another year of extended aging. The result is an incredibly smooth, dark stout loaded with depth and balance between the beer and the barrel characteristics. Rich chocolate aromas blend with those of the Mezcal with hints of stone fruit and sweetness. Flavors include a hint of heat, chocolate, notes of the mezcal with a little salt, and a background of fruit character. You'll find yourself warming up from the richness of the stout and from the mezcal. She drinks silky smooth as it is a low carbonation beer best served at 45 to 50 degrees and meant to be enjoyed slowly.

A formidable combatant HELA leads us to our next limited bottle release. She is the last in the three part series this year that features strong protagonist characters in literature and pop culture, with HELA focusing on power, strength, speed.  This bottle release is a special one as it is a blend of KATNISS (Imperial Stout barrel-aged in Heaven Hill bourbon whiskey barrels) and of FURIOSA (Imperial Stout barrel-aged in Basil Hayden's bourbon whiskey barrels). Those two Imperial Stouts spent two full years barrel aging in their respcective barrels, with another year of extended aging. It was by chance that HELA was discovered when a member of our team mixed the two stouts together during a barrel-aged taste testing.She drinks silky smooth as it is a low carbonation beer best served at 45 to 50 degrees and meant to be enjoyed slowly (think of it like a bourbon on the rocks).  Aromas of bourbon mostly of Basil Hayden's, caramel/coconut, sweet toffee and chocolate fill the rim of your glass and consistently evolve as the beer warms.  Flavors of dark bakers chocolate, bourbon and barrel finish will fill the void left from the aromas.This extremely limited beer can be enjoyed now as our brewer intended or further cellared for additional aging and evolving flavor profile.

Depicted as a ruthless individual ARTEMISIA is actually a masterful leader, incredibly perceptive and a complex individual. ARTEMISIA is the seventh bottle and last bottle in our series of bottle releases this year that feature strong female characters in literature and pop culture. This impressive Imperial Stout spent two full years barrel aging in Cognac brandy barrels, with another year of extended aging. The result is an incredibly smooth, dark stout loaded with depth and balance between the beer and the barrel characteristics. Rich chocolate aromas blend with those of the cognac and sweet plum. Flavors of of rich dark chocolate, plum notes, barrel characteristics and cognac. You'll find yourself going back again and again for sips as the beer warms itself up in every sip. Dark, thick and viscous and full of wonderment she drinks silky smooth as it is a low carbonation beer best served at 45 to 50 degrees and meant to be enjoyed slowly.
