Sclafani's New York Bagels and Bread

Our bagels are made with the proper process of water-boiled bagels - New York Style! First, the dough is shaped and left to sit in a refrigerator for a couple of days. The cool temperatures slow down the activity of yeast in the dough as it rises. This longer, slower fermentation generates the tasty flavor you experience. Next comes the key step - boiling! The chilled dough rings are boiled in water, locking the liquid inside and expanding the interior.
