On the Longest Night of 2019 on December 21st - as we do every year - we experimented around the brewhouse and the coolship. Aside from the three blends featured in this Twist of Fate-series, that day we also put some sherry barrel staves directly on the coolship to macerate in the cooling lambik wort.       An extremely complex but at the same time very refreshing beer. It somehow resembles a hoppy gueuze with a distinct bitterness. Indeed, the Saisons were generously hopped for the well-known keeping properties of hops. Also, they were often dry-hopped, as is the case here. Saison de la Senne has been barrel-aged for three years before bottling. Amber in color, its nose reminds one of Lambic, with notes of fallen apples, wood, leather, and the typical funky character of the Bretts. In the mouth, a soft tartness is present, quickly leading to dryness. The aromas of the nose are completed by those of spelt and rye, quince, green gooseberries and a complex vinous character.       HOPPY SESSION ALE What the heck is a Dribble Belt? Aside from being a hoppy, tasty low-gravity session beer, a dribble belt is a very important component of a hop picking machine. The dribble belts separate the hop cones from the rest of the plant material- the vines, stems, and leaves. Multiple conveyors beneath the dribble belts collect the lightweight hop cones and carry them along through the machine to the kiln where they are dried. The vines, stems, and leaves are then transported to become compost. Interestingly, the hop picking machine was invented right here in Santa Rosa, California, by Florian Dauenhauer in the early 1940’s. This invention changed the hop farming industry forever.       Thiriez labels La Maline with the description of Bière Noire des Flandres, which is a porter-style beer in that it uses dark specialty malts, but is fermented and aged with the use of some Brettanomyces and lactobacillus, in oak foeders.       This vintage of Cuvée is a blend of extensively macerated beer on Pinot Blanc grapes, some fresher beer on Muscat grapes and a touch of spontaneously fermented wine of Olasz Rizling grapes. The result is an aromatic, appetizing wild ale with a rich acidity and dry finish. In the nose I detect lychee, melon, elderflower which comes from the Muscat grapes. Further on – white almond, also some tangerine, honey, and a pronounced brett aroma, like hay and barnyard, but in a complementary way. Also in the taste the lychee and melon are present, together with a fruity, firm acidity and a slight and pleasant astringency from the wood and tannins of the grapes.       Keller Pilsner. “STS” is the 3-letter code for our local Sonoma County airport, the Charles M. Schulz Airport. STS Pils is a classic German-style pilsner but with a Russian River twist because we dry hop this beer with a small amount of European hops. It is straw in color and will often have a slight haze due to the fact that there is a small amount of yeast left in the beer. This beer is hop-forward with a firm malt foundation, strong lager yeast characteristic, and a dry, bitter finish. A truly great Pilsner is a difficult beer to perfect, as its light crisp flavor profile leaves little room for error.
