Karniyarik is an eggplant dish, stuffed with sauteed ingredients and baked in an oven. The eggplant is soaked in a brine beforehand, so it isn't bitter (as eggplant is typically known to be). In the saute are tomatoes, onions, garlic, and mushrooms, along with various spices. Served over your choice of rice & bulgur, or pita, comes with cacik and choban salad.
