Poke Market by Chef Michael Nguyen offering an authentic taste of Hawaii. The menu will feature poke prepared in the traditional Hawaiian method, with pre-marinated fish that emphasizes quality and flavor. Originally from Hawaii, Chef Nguyen has honed his culinary skills at some of Las Vegas’ premier dining establishments, including L'Atelier de Joël Robuchon, Restaurant Guy Savoy, and Aqua Seafood & Caviar Restaurant, where he continues to serve as chef de cuisine. With the opening of Poke Market, he returns to his roots, sharing the traditional Hawaiian dishes he grew up enjoying with the Las Vegas community.
