We're sourcing our chicory from Vera Luce Farm, located in Buffalo Junction Virginia, who specializes in Italian and Southern European vegetables. His chicories are a blend of field mixed Castelfranco, Red Chioggia, Frisee Hearts, and Rosa Del Veneto, all of which have a bright, crisp flavor. At The Buttery, we will blend these chicories in with a local crispy green leaf to make a custom mix for this salad.
