Fireside Chat is a subtle twist on the traditional seasonal brew. We start with a copper-hued malt base of California-grown two-row barley, German Vienna Malt, Crystal Malts and Biscuit Malt. Then we start layering on the hopsgrown all along the west coast in California, Oregon and Washington. We combine Magnum, Chinook, Cascade, El Dorado and Simcoe to create our own unique twist on the IPA style with intense aromas of grapefruit and tangerine peel, pineapple and pine trees. The Ale's recipe is different every yearas is the tree on the labelbut the intent with which we offer it remains the same: joy and celebration of the newness of life. Since ancient times, trees have symbolized the winter solstice when the earth, with its seasons, appears born anew. Our tree for 2015 is the Deodar Cedar (Cedrus deodara), better known as the California Christmas Tree. Native of the Himalayas, it takes its name from the ancient Sanskrit devadaru, meaning timber of the gods. This coniferous evergreen, with its gracefully droopy branches and blue-green needles, has been a San Francisco favorite for over 150 years. The annual search for the perfect tree for our Christmas Ale label usually takes us far afield. This one began and ended with the search for a parking space near the Brewery! Getting out of the car, we couldn't help but notice the way the late-afternoon sun danced amid the branches of two lovely Deodars just half a block from Anchor's front door. Our longtime label artist Jim Stitt-who has been drawing trees for us since 1975loved "our" Deodars and, like us, was amused that they were about as local as local gets! It was inspired by this famous line from a well-loved children's storybook: "And Santa sat on his great butt, enjoying a hardy brew" In case you find that amusing, the brewer hastens to point out that in England, "butt" refers to a certain sized barrel, in fact, holding 108 Imperial gallons. Back in the day it was quite a normal thing for a brewery to put its beer up in a large butt for storage. Still snickering, eh?       Two weeks ago the guys at Uinta decided to try something new, take one batch of Wyld Extra Pale and do a special, one of a kind edition. For this special edition Uinta acquired a shload of fresh Simcoe hops, enough to average 4lbs of hops per barrel of beer ( 1 beer barrel = 31 gallons). The result, we hope is one citrusy, resinous and sessionable sombitch! The "wet" in Wet n' Wyld refers to the state of the hops. Most hops are dried to eliminate weight and spoilage, these are fresh off the vine, wet as nature made them. Wet n' Wyld is draft only (no bottles) and will be available at the breweries pub and those pubs and bars that tend to give a shit about good local beer.

Old Engine Oil is well-hopped with the sweetish variety Galena from Washington State, Worchester Fuggles and East Kent Golgings.The PG (present gravity) of Old Engine Oil is unusually high. This is because Ken Brooker wanted to produce a beer that had the character of a barley wine, i.e. high PG, lots of mouthfeel and high viscosity but with only6 % ABV, rather than the more normal barley wine ABV of about 8.5 %.He has used a high mash temperature to give the required wort profile. The trick is to balance this sweetness with the hop bitterness and acrid flavors from the Roast Barley.
