He moved to St George and quickly realized there is no authentic BBQ in this town. He cooks on a offset smoker and only uses wood. No propane or other elements are used to bring heat. The meet is kissed with just enough smoke to bring it a nice bark and infuse the wonderful flavor into the meat.
