A French Omelette, in it’s authentic form, is simply eggs, butter, salt, and a garnish of herbs.
By using a specific technique, the eggs will be cooked until they are just set. They’re then rolled into a log with a smooth glossy finish on the outside, free of browned cooking spots and a creamy custard like texture on the inside. Garnished lightly with chives or your choice of herb. Served with small Baguette slices, Jam of your choice and butter.
