One for the vegetarians! We made a dupe of our pork tenderloin using cracker crusted eggplant and it is SOOOOO good! Style it one of three ways:
Classic - topped with lettuce, tomato, red onion, mayo and mustard
Nashville Hot - tossed in hot sauce and topped with mayo and pickles
Parmesan - tossed in oregano and basil and topped with marinara, mozzarella, seasoned parm and a balsamic red onion arugula salad
