      Hakata Whisky is a unique and highly sought-after spirit made by the Hikari Distillery in Fukuoka, Japan. It is distilled and matured using 100% barley, with a fraction of the barley fermented with Koji to create a savory, Umami flavor. The whisky is aged in Sherry casks in traditional warehouses and open-air warehouses, exposing it to the humid summer temperatures and cold winter temperatures of Fukuoka.As a result, Hakata Whisky has a bold and almost classical flavor, with a freshness that is truly unique.     • FUKANO

      Founded in 1823, Fukano Distillery is located in Hitoyoshi City, of the Kumamoto Prefecture of Japan on the island of Kyushu. Hitoyoshi is surrounded by mountains and is known for its pure water and nature. Shigeruriku Fukano is the fifth generation of his family to run the distillery. They use a combination of malted and un-malted rice to make their whisky in a pot still. These releases are very limited in nature and only a few casks are bottled each year. For 2016 they have released a few single new oak casks and also one white label marriage of sherry and new oak casks.Hitoyoshi, Kumamoto, Japan.Fukano Distillery makes a wonderful whisky that is sold in export markets only and is not to be considered as a Japanese Whisky. It is a Whisky that is distilled, matured, and bottled in Japan.

      Kurayoshi the foothills of Mt. Daisen, here has a fine water that is indispensable for whisky distilling. Kurayoshi, called that Life is good is the origin of the word, but the annual temperature range in the Sea of Japan side is large, and the aging of whisky also advances quickly compared to the actual situation like Islay Island.It is no exaggeration to say that whisky is made by barrel and the nature. Our distillery is not big, we have a small number of staff, however, we will continue to strive all the staff with the desire to deliver the best whisky.

      The history of Japanese whisky is the history of Shinjiro Torii, the founder of Suntory.In 1923, Shinjiro Torii envisioned a whisky filled with the essence of Japanese nature and hand-crafted by artisans through a patient process of enhancing the work of nature.He dreamt of creating subtle, refined, yet complex whisky that would suit the delicate palate of the Japanese and enhance their dining experience.Though initially inspired by traditional Scottish whisky, Torii envisioned a Japanese approach by choosing a terrain and climate completely different from those of Scotland.       Keizo Saji, the second Master Blender, inherited his father's quest to push the boundaries of what a Japanese whisky could be. He had searched all over Japan for high quality water that will become the most delicately aromatic to produce whisky that people would love. After searching with tenacity to the headstreams of rivers and deep into rugged mountains, he found Hakushu.The Hakushu Distillery is without question one of the highest distilleries in the world, built amidst the deepest forests of Mt. Kaikomagatake in the Japanese Southern Alps.The majestic forest that surrounds the Hakushu Distillery shelters an abundance of plant varieties reflecting the many expressions of Japanese nature. The malt whiskies born here are simultaneously blessed with a very particular microclimate, verdant forests, and water offering a rare softness and purity, only made possible by filtration of rain and snow through thousand-year-old granite rocks.

      This whisky is matured in the finest Mizunara oak casks. Their pioneering research into the effect of wood selection on whisky maturation has led to the development of bespoke barrels, crafted from slow growth, air-seasoned wood from hand-selected trees. These casks are handmade due to Mizunara oaks delicate wood grain. This spirit is gently matured in traditional style for many years before it embarks on its unique sea voyage.Mizunara oak casks are the most expensive casks in the world.

      Sustainably farmed in the Jalisco Highlands, 100% Blue Weber Agave is grown and distilled family owned and operated distillery.The process begins with planting Agave tequiliana Weber (blue agave) in the red soil of Atotonilco el Alto, Jalisco.Milling occurs in two different processes to extract the precious juice of the cooked agave.In one step they use the tahona, a large stone wheel that rotates slowly, crushing the agave.They use small copper stills that infuse an exquisite flavor into our tequila, precisely and carefully calibrating the alcohols that need to be removed, finally being left with only the best after two distillations.       Referred to as 'the orchard of Jalisco' due to its vast and exuberant vegetation, Atotonilco is in the highlands and the first town you come to when travelling up from Guadalajara in the south and it is here that the Fonseca family grow and harvest their premium blue agave.Dedicated to agriculture, the Fonseca family were major suppliers of all basic crops, grains, and fruits, but by the 1960's their main focus had shifted to agave as they began to supply many of the tequila producers throughout the highlands.The mission at Don Fulano has always been to produce exceptional tequila. They employ a truly unique dual distillation process; an old style double column still and also a traditional copper pot still, using heat to eliminate any unwanted alcohols. The two distillates are then blended. Anywhere between 12-16% of the distillate comes from the column still, this process is used exclusively by Don Fulano and allows them to consistently create tequilas of the highest quality.

      Mal de Amor Mezcal is a Zapotec-family-owned brand from Santiago Matatlan, Oaxaca. The palenque is just off the main paved road on the outskirts of town, and it features a full restaurant, a robust barrel aging program, and a small bottling and labelling room. The agave used for production at Mal de Amor come from a variety of different lands in Oaxaca which allows for a rich diversity in expressions to include different terroir. Portions of the family owned land is used to maintain the sustainability of agave for future generations.

      On the steep precarious hillsides of Oaxaca, Guerrero and Durango, varieties of agave indigenous to the region grow wild and are heavily sought after by the local mezcaleros. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey, these flavors are traditionally extracted to produce mezcal that is wildly refined. Because we at Bozal believe that something wild produces a far richer spirit. The Spanish term, bozal, translates to wild or untamed. We chose this name for our Mezcal in reference to the wild species of Mexican agave grown in hard-to-reach, uncultivated lands of Oaxaca, Guerrero and Durango. As well as for the untamed traditions used by our family-operated distilleries, or mezcaleros, to distill small batches in those same locations.

      After experiencing many sunrises through its 7 to 35 years lifespan, the agave is finally ready to reproduce for its first and only time, before returning to the land. In this final process, the agave will invest all its energy to reproduce by growing a stem, quiote. Once grown, the seeds at the top will be blown by the wind and scattered through mountains planting the next generation of wild agaves.To maintain the biodiversity of these wild agaves, Casa Amaras handpicks the strongest and healthiest mother plants, waits till they are ready to reproduce, and at the right time carefully selects the best seeds. At present, we have planted over 150,000 seeds representing 18 different types of agave, among them: Espadin, Tobala, Sierra Negra, Mexicano, and Jabali.
