8 years after the small cooperative formed, the Gishyita mill was purchased by Providence Byiringiro who made it his mission to improve the quality of life for coffee growers in the community. Providence saw potential here with the ideal terroir for creating beautiful coffees. Located on volcanic sloped surrounding Lake Kivu, the soil is nutrient-abundant, while high altitude cliffs trap winds that help evenly dry process coffee. At the hidden site of Alto La Pelota, there are hand carved statues that to this day are still as bright as the day they were painted. (yuh•buh•suh•luh)No, this isn’t a flavored coffee with sugar in it. Those crazy flavors you’re picking up is what coffee can taste like when taken really good care of. The “natural” process turns coffee cherries into raisins before getting the seeds ready for roasters. Fermentation makes some gnarly flavors if not carefully monitored, so we only work with small landholders in the Yirgacheffe region of Ethiopia that painstakingly pay attention to the fermentation process.
