We revisited this classic style with Full Pocket Pils. Soft noble hop aromas complement a supremely crisp, refreshing finish. Kick back and live life with a full pocket.

6.8% - Hazy IPA - An amazingly approachable true Hazy IPA. Hazy Beer Hug is filled with notes of peaches, white grapes, and guava on a pillow soft body. This beer makes sure your day is filled with bright sunshiny haze!

4.3% English Style Bitter - Inspired by visits to English country pubs, Honker’s Ale combines a fruity hop aroma with a rich malt middle to create a perfectly balanced beer. Immensely drinkable, Honker’s Ale is not only the beer you can trust but one you’ll look forward to time and again.

6.3% Hazy IPA - This release is dedicated to Jonny, a long time Goose Island employee. Jonny, and Brewer Quinn, came up with this recipe after Jonny’s recent victorious battle with cancer. Jonny lost the ability to taste many flavors, an unfortunate consequence of battling cancer. He almost completely lost is palate and mangos and cinnamon were two of the few things he was still able to taste. We’re happy to say that Jonny is now a cancer survivor! This beer pays tribute to the flavors that were never lost. A portion of proceeds from this beer will go to support the life changing research at the Robert H. Lurie Cancer Center of Northwestern University, where Jonny was treated.

7% Wild in character, a complex ale with dried fruit and clove aromas, and a satisfying dry finish. Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish.

7.0% - Juicy IPA - A shockingly easy drinking IPA with an electric bouquet of tropical & Citrus flavors. Nugget, Sultana, Citra, Mosaic, and Eureka hops provide the spark that makes Neon Beer Hug shine!

6.5% Belgian Style Farmhouse Ale - Our sparkling Belgian Style Farmhouse Ale is wine barrel-aged with an abundance of hand-zested orange peel. Spicy white pepper notes contrast the citrus tartness. The light, refreshing, creamy vanilla finish will excite those fond of Champagne. Originally brewed by Belgian farmers to attract the best farm hands, we were inspired to brew an exceptional ale as inviting as the original Belgian Farmhouse ales. Light and effervescent, we named it for our founder’s granddaughter Sofie.

6.7% - Wine BA Fruited Saison - Riffing on some of our favorite tunes with a nod to our sour program, VINyl is a wine barrel-aged Saison with blackberry, lemon, and elderflower. Perfect for the end of summer, this easy drinking vintage is lightly tart, but jam packed with fruit.

500mL Bottle - Aged in the second-use barrels that were once home to Kentucky bourbon, this traditional English-style barleywine possesses the subtlety of flavor that only comes from a barrel that’s gone through many seasons of ritual care. This year’s variant will pick up more bourbon barrel character by switching from third to second use barrels. The intricacies of the previous barrel denizens – oak, charcoal, hints of tobacco and vanilla, and that signature bourbon heat – are all present in this beer. Hearty and complex, Bourbon County Brand Barleywine is a titan and a timeline; a bold, flavorful journey through the craft of barrel aging.

500mL Bottle - Aged in 11-year-old Knob Creek® Bourbon barrels, the Small Batch Bourbon created by Booker himself in 1992, this beer is simultaneously a celebration of Knob Creek’s 25th Anniversary and a toast to the chance encounter that brought Bourbon County Brand Stout to the world.

500mL Bottle - For this variant we aged Bourbon County Stout in rye whiskey barrels, then added raspberry and blackberry juice and puree from Michigan and Washington. The process resulted in complex jammy fruit notes that are prominent but well integrated with the caramel and chocolate flavors of the beer and spicy rye character from the barrels.

500mL Bottle - Working with our friends at Intelligentsia, we flew down to Guatemala to source some of the world's best coffee to use as we release the first-ever Coffee Barleywine. The beer is an English-style Barleywine, meaning malt forward, and aged in 4+ year old Heaven Hill Bourbon barrels before adding La Soledad coffee beans right before packaging to retain a bold coffee aroma and flavor.

500mL Bottle - The same recipe as BCBS, but aged in 12-year old “Elijah Craig Barrel Proof” bourbon barrels. This bourbon was awarded 2017 “Whisky of the Year” by Whisky Advocate, the top honor in the world of international whiskey. Reserve is intended to showcase the nuances of a premium single source, and highly sought after bourbon.

500mL Bottle - We combined things we love, orange and chocolate, taking Bourbon County into a new and exciting direction. While the chocolate compliments the Bourbon County base, the orange zest offers a point of contrast for a bold new flavor profile to delight Bourbon County fans and newcomers alike. Utilizing whole grade A vanilla beans from Madagascar, Vanilla delivers on all the quintessential things fans love about this variant: aromatic vanilla, marshmallow, toffee, oak, and floral notes highlighting the creamy mouthfeel and enhancing the chocolate flavors that are ingrained in Bourbon County Stout.

500mL Bottle - Made from two row and malted wheat, Bourbon County Brand Wheatwine debuts this year. As the first recipe to veer from the original Imperial Stout since Barleywine in 2013, Wheatwine displays a deep amber color, lighter than its counterparts and acts a true medium to convey the characteristics of our 4+ year old Heaven Hill Bourbon barrels. Wheatwine overflows with flavors of caramel, vanilla, butterscotch, and toffee.

500mL Bottle - This year’s Proprietor’s explores the broad spectrum of chocolate. Using a combination of dark chocolate and two types of cocoa nibs, this rich and decadent beer highlights the whole range of chocolate from smooth and silky milk chocolate flavors to deep and earthy dark chocolate.

500mL Bottle - 2-Year Reserve Bourbon County Stout was aged 24 months in 11-year-old 25th Anniversary Knob Creek barrels. The barrels of this once in a lifetime bourbon delivered an oak-forward intensity accented with subtle hazelnut and chocolate notes that complimented the flavors inherent in Original Bourbon County Stout. 2-Year Reserve is incredibly special, and we’re excited to share this variant with you all.

500mL Bottle - Created in partnership with our next door neighbors, Intelligentsia Coffee, Café de Olla is inspired by the traditional Mexican beverage of the same name. We added coffee beans and cold coffee to Original Bourbon County Stout and then enhanced this beer further through additions of cassia bark, orange peel, and panela sugar. The resulting beer is layered in complexity. Coffee and orange permeate the nose and are followed by notes of cinnamon, chocolate, and a pleasant sweetness.

500mL Bottle - “Mon Chéri” means “my darling” in French and this recipe is a love letter from our brewer, Quinn, to his wife who loves cherries. Mon Chéri Stout is made with Balenton and Montmorency cherries, brewed with oats and a dash of brown sugar creating aromas of amaretto and almond. With one sip you’ll instantly get flavors of cherry cobbler, vanilla, and chocolate, followed by a silky, velvety finish.

500mL Bottle - This year’s Bourbon County Stout, aged in a mix of Heaven Hill, Buffalo Trace, and Wild Turkey barrels, yields a rich, complex mouthfeel. Flavors of cocoa, fudge, vanilla, caramel, almond, plus leather and tobacco, permeate this beer and deepen with each sip. We’ve bottled Bourbon County Stout for 15 years and this year’s vintage is one that you will want to hold on to for years to come.

500mL Bottle - The 2018 Festival of Wood and Barrel-Aged Beers (FoBAB) award-winning variant is back for its second year, this year aged 100% in Larceny wheated bourbon casks from our partners at Heaven Hill. The result is a softer flavor profile, full of caramel, vanilla, butterscotch, and toffee flavors, all while carrying the nuances of Larceny bourbon barrels.

500mL Bottle - Our Reserve Bourbon County Stout releases showcase how a premium single source bourbon barrel can influence the nuances and flavors of our original BCS.The 2019 Reserve Rye is aged in 100% Rittenhouse Rye barrels - lovingly referred to as "the bartender's favorite" rye. Rittenhouse's Barrels had a unique effect on the original imperial stout, imparting flavors of fruit and spice. Reserve Rye accentuates all that makes Rittenhouse and Bourbon County unique.

500mL Bottle - 14.6% Imperial Stout - We partnered with the Old Forester Brand and paired Bourbon County Stout with barrels from one of the world’s most sought-after bourbons – Old Forester Birthday Bourbon. The limited-edition bourbon, released each year on the founder George Garvin Brown of Brown-Forman’s birthday, is made in hand-selected 11-year old barrels and chosen from one specific day of production – resulting in flavor profiles that vary every year and never replicated. Old Forester’s tasting notes for the 2019 Birthday Bourbon are: “Rich oak spice and blackcurrant coupled with light maple, caramel cake, and white floral notes.” This year’s Birthday Bourbon County Stout is a truly unique variation that is a must-have for bourbon and beer lovers alike. EXTREMELY LIMITED - BOTTLES POURS ONLY.

500mL Bottle - 14.6% Wheatwine - Caramella or ‘candy’ in Italian is a wheatwine aged in Larceny Wheated Bourbon barrels with apple, cinnamon, and natural caramel flavor added after aging. Just like last year, the sweet smoothness from the Larceny Wheated Bourbon barrels adds a lingering warmth that complements the added flavor nuance. It’s nostalgia-inducing flavors are reminiscent of a caramel apple. Our Lab Tech, Joey Tidei, created this variant as a tribute to his love of seasonal flavors. This luscious embodiment of caramel perfectly paired with a slightly-tart apple flavor will transport you to a crisp autumn day.

500mL Bottle - 14.1% Imperial Stout - We’re excited to debut our first-ever tea-inspired variant. Brewer Paul Cade brought this idea to life, inspired by his girlfriend, Martha, who prefers tea over coffee. Our Bourbon County Kentucky Fog Stout is a take on the London Fog tea drink. With that flavor profile in mind, we added Earl Grey Tea and Black Tea from Kilogram Tea, as well as clover honey from The Honey House, to make a Bourbon County Stout variant with a complexity like none before. Trust us, you’ll just have to try it.

500mL Bottle - 13.3% Imperial Stout - Bourbon County Special #4 Stout is an oatmeal stout variant of our original Bourbon County Stout recipe, also aged in bourbon barrels, that uses crystal oats to add a nutty character and a smooth mouthfeel. After barrel aging, we added Intelligentsia Coffee, both their cold coffee and single origin coffee beans from Ethiopia, called “Metad Buku,” to bring out a pleasant fruity coffee character. Lastly bourbon barrel-aged maple syrup from Bissell Maple Farm in Ohio is added which provides complexity to the nutty oats and coffee to round out the flavors, ultimately reminiscent of your breakfast ‘special’ at the local diner.

Our primary focus every year is to make this beer the best that it’s ever been, with the best ingredients, which includes the finest of bourbon whiskey barrels. This year’s Bourbon County Stout is aged in a mix of bourbon barrels from a variety of whiskey distilleries. Barrel-aged for a year to develop the complexity that only time can provide, Bourbon County Stout boasts a unique blend of flavors such as fudge, vanilla and caramel — topped off with a rich, complex mouthfeel.

14.2% Imperial Stout - This year’s Proprietor's Bourbon County Stout was inspired by third-generation Italian American brewer Emily Kosmal’s love of spumoni, a classic Italian frozen treat. Spumoni is a tri-colored frozen dessert that contains candied fruit and nuts between each layer, historically including flavors such as pistachio, cherry and chocolate. Blended with fresh pistachios, cacao nibs, candied Amarena cherries, and natural vanilla flavors, the 2020 Proprietor’s Bourbon County Stout is incredibly complex and layered with cocoa, nut, and dark fruit notes with hints of vanilla and oak. Emily, who also created the concept for 2016 Proprietor’s, is our first brewer to have two Proprietor’s concepts picked for release.

500ml Bottle - 14% - Imperial Stout - Our goal each and every year is to uphold the integrity of Greg Hall's recipe and make the best Bourbon County Stout Possible, and this year is no exception. Our rich Imperial Stout is blended from a mix of bourbon barrels from distilleries such as Heaven Hill, Wild Turkey, and Buffalo Trace, each aged in freshly emptied bourbon barrels for 8-14 months. Expect flavors of chocolate and vanilla, oak, whiskey, and molasses, followed by caramel, berry fruit, and almond.

500ml Bottle 14.3% - Imperial Stout - At the heart of each Bourbon County are the wood characteristics we thoughtfully amplify. This year, we took wood complexities to another level by doing something we’ve never done before: we took fully-matured Bourbon County Stout and finished it with toasted fruitwood—specifically, honeycomb-shaped cherry wood chips. The versatility of the cherry wood and honeycomb shape allowed for maximum flavor extraction, revealing complex characteristics like red fruit, ripe cherry, and light toffee, which are not found in the original oak barrel itself. The result is an amazing elevation and a notable difference from our Original Bourbon County Stout.

500ml Bottle - 14.1% - Imperial Stout - Pushing the boundaries of barrel-aged stouts is in our DNA, and with that, we brought to life our first-ever cola-inspired variant. Brewers Paul Cade and Jason Krasowski bonded over their love for a classic cola while creating the Classic Cola Stout. Combining the refreshing nature of classic cola and picking up the flavor profile from a whisky cola, we added lime and orange juice and zest, plus coriander, cassia bark, nutmeg, brown sugar, and vanilla to bring out the complex characters of the classic drink. This is the ultimate twist on a whiskey cola and a must-try for Bourbon County Stout, cola or whiskey/cola lovers.

500ml Bottle - 13.2% - Imperial Stout - For the first time ever, we’re digging into the Proprietor’s (Chicago-only release) vault and bringing back a fan favorite with Bourbon County Fourteen Stout. But this time, it’s with a twist. We’re paying homage to the popular Proprietor’s 2014 recipe, but upping the rye ante by adding rye to the mash bill. Layering cassia bark, cocoa nibs, panela sugar, and coconut water, this stout has an intricate, sweet and spicy flavor profile that will have fans going back sip after sip.

500ml Bottle - 12.8% - Imperial Stout - For the second year in a row, Proprietor’s Bourbon County Stout is inspired by a classic frozen treat and brewed again by the mastermind, Emily Kosmal. A flavor house specialist, Emily has the knowledge and skill to bring her dessert treats to life. Proprietor’s Bourbon County Stout is aged in bourbon barrels and blended with luscious strawberries, vanilla, and coconut, reminiscent of a classic strawberry ice cream bar. These elements come together to create the indelible flavors of decadent shortcake, layered with vanilla and topped off with the slight fruitiness of strawberries, similar to the ice cream bar’s strawberry core. Emily, who also created the concept for 2016 Proprietor’s and 2020 Proprietor’s, is our first brewer to have three Proprietor’s concepts picked for release.

500ml Bottle - 15.4% - Imperial Stout - We partnered with our friends at Blanton’s and aged our Imperial Stout for 18 months in barrels from one of the world’s most sought-after bourbons, Blanton's Original Single Barrel Bourbon. Taken from the center-cut or middle sections of the famous Warehouse H, Blanton’s Original Single Barrel was once only available for ambassadors, dignitaries, and friends of the Blanton family, but now is available for everyone to enjoy. Just as we set the standard for barrel-aged stouts, Blanton’s set the standard for single barrel bourbons. Through our partnership, we created a truly unique reserve filled with rich dark chocolate and oak notes, finished with warm aromatics of baking spices such as clove, nutmeg, and cinnamon.

16% - Imperial Stout - Our Double Barrel Toasted Barrel Stout was aged for one year in Elijah Craig’s Small Batch Bourbon Barrels, then another year in Elijah Craig Toasted Bourbon Barrels. These toasted barrels are built to the same specifications as normal bourbon barrels but are more heavily toasted and very lightly charred. Not only does this stout embody distinctive elements from Elijah Craig’s award-winning Small Batch Bourbon Barrels—like warm spice & vanilla—it also deepened in intensity during its second year of aging. The result? A Bourbon County Stout unlike any before. In addition to the familiar chocolate, caramel, and vanilla comes flavors of toasted marshmallow and a very pronounced fruit and oak finish. This is only the second time we have packaged a “Double Barrel” Bourbon County Stout —and trust us, you’ll want to get your hands on this special limited-edition gem.

500ml Bottle - 14.3% - Imperial Stout - Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. One sip and you’ll be reminded of pizzelle cookies, Easter Pane di Pasqua and, of course, almond biscotti.

500ml Bottle - 13.2% - Imperial Stout - The specific Burundian coffee blend combined with our Imperial Stout is called Turihamwe, which means “together”, and is a perfect tribute to all the hands that go into making it – from the female coffee farmers in Burundi that produced the blend, to our friends at Intelligentsia. The result of this “togetherness” is another exceptional coffee variant featuring rich chocolate, coffee, and caramel flavors that will appeal to coffee drinkers and beer lovers alike.

500ml Bottle - 14.3% - Imperial Stout - This year, our Imperial Stout is aged and blended from freshly emptied bourbon barrels from Heaven Hill, Four Roses, Wild Turkey, and Buffalo Trace distilleries. Expect flavors of vanilla, dark chocolate, toffee, molasses, almond, and dried fruit.

500ml bottle - 13.4% - Imperial Stout - This recipe was dreamed up after two of our brewers, spent a night out on the town trying some of the best cocktails the city has to offer. The result is a brewer’s take on a jungle bird cocktail that combines banana, coconut, lime, and pineapple. Proprietor’s Stout will bring Chicagoans down to the tropics this Bourbon County Stout season, a welcome escape from the Chicago cold.

500ml Bottle - 17% - Imperial Stout - This Reserve offers us a rare opportunity to highlight the distinct characteristics of our rich Barleywine aged in 14-year, 16-year and 17-year-old barrels of an amazing bourbon pedigree. Our Reserve Two-Year Barleywine evokes the rich intricacies from that of Old Fitzgerald’s Bottled-In-Bond Series for a velvety taste of rich malt, entwined with notes of toffee, cherry, vanilla, fig, and almond.

500ml Bottle - 14.4% - Imperial Stout - Going back to the inception of Bourbon County Stout, the 30th Anniversary Stout is aged from a blend of Jim Beam barrels from their Small Batch Bourbon Collection barrels including Basil Hayden, Booker’s, Baker’s and Knob Creek. Expect notes of dark chocolate, vanilla, cherry, and almond. We’re excited to raise a glass to this extraordinary 30-year-old history and craftsmanship.

500ml - 13.9% - Imperial Stout - Members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa’s childhood memories of stealing fig cookies out of her grandma’s cookie jar during her summers on Lake Michigan. Our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.

500ml Bottle - 14.1% - After crafting the very first bourbon barrel-aged imperial stout, we’ve learned that to have the best beer, you start with the best possible ingredients. Barrels are such an important ingredient, and we continue to use only the best our friends on the bourbon trail have to offer. 2023 Original Bourbon County Brand Stout is aged in a mix of freshly emptied bourbon barrels from Buffalo Trace, Heaven Hill, Four Roses and Wild Turkey distilleries. Barrel aged for an average of 12 months, the Original Bourbon County Stout boasts deeply developed flavors of fudge, vanilla, and caramelized sugar with a rich, decadent mouthfeel.

500ml Bottle - 12.9% - Feeling nostalgic this year, we dug back into our Bourbon County vault and pulled out an iconic recipe. Back in 2013, we released our “Backyard Rye” and our brewer Mike Siegel found himself hand picking mulberries off trees just steps away from our Goose Island Barrelhouse here in Chicago. This year, inspired by that initial release and by his own childhood memories of picking fruit in his own backyard, Mike was enthusiastic to get to work on this year’s 2023 Bourbon County Brand Backyard Stout. This barrel-aged stout is first aged in bourbon barrels for at least one year and then finished and blended with mulberries, boysenberries and marionberries. Each addition of berry contributes its own distinct flavor profile, with some adding sweetness and others providing acidity and complexity. A taste of the past, this imperial stout is a balanced and nuanced play on fresh fruit, vanilla, and chocolate.

500ml Bottle - 13.9% - Welcoming back another member of the family this year, 2023 Bourbon County Brand Bananas Foster Stout makes its debut on the national stage. This recipe was first released in 2017 as Bourbon County Brand Proprietor’s Stout only to Chicago drinkers. Beloved by many, that release is especially near and dear to innovation brewer Quinn Fuechsl’s heart. At the time when Goose Island first released this beer, the brewery hadn’t experimented with bananas much. However, Quinn had a good feeling that the fruit, along with almond and cassia bark, would be perfect ingredients in a bourbon barrel-aged imperial stout — indeed, he was right. Sure to bring a bit of flair to your palate, this decadent pour is well-balanced with deep caramelization, aromas of fresh baked banana bread and warm notes of cinnamon and almond.

500ml Bottle - 14.3% - Year after year, Proprietor’s Stout is an homage to the adventurous craft beer community here in Chicago. 2023 Bourbon County Brand Proprietor’s Stout embodies that spirit while subtly evoking a comforting sense of home and the holidays. In the heart of Chicago winter, we were inspired by the warming flavors of a classic dessert: rice pudding. Never having used rice as an ingredient in a stout before, our brewers were excited for the opportunity to brew these flavors into a beer worthy of the city of Chicago. Using a combination of cassia bark, brown sugar, raisins and toasted rice, the final recipe is a taste of home cooking. This stout wraps you in a culinary blanket of toasted rice, vanilla custard, dried fruit, and baking spices. Proprietor’s is our love language, Chicago.

500ml Bottle - 15.5% - Introducing the newest addition to the Bourbon County family: our first ever “Cask Finish” stout. Inspired by the artistry of our friends at Angel’s Envy, we embarked on a journey to further develop the complexity of our barrel-aged stout by introducing never before used “finishing barrels.” The beer starts in freshly emptied barrels that once held Angel’s Envy Kentucky straight bourbon. After aging in those for a year, the beer was transferred to a second set of Ruby Port wine barrels where it patiently matured for another year. This finishing process refined and amplified the flavors of cherry, spice and cocoa within our aged stout. Bourbon County Brand 2-Year Cask Finish Stout is a testament to our legacy as the originators of bourbon barrel-aged stout.

Barrels are such an important ingredient and we continue to use only the best our friends on the bourbon trail have to offer. 2024 Bourbon County Brand Original Stout is aged in a mix of freshly emptied bourbon barrels from Buffalo Trace, Heaven Hill, Four Roses and Wild Turkey distilleries. Barrel-aged for an average of 12 months, Bourbon County Original Stout boasts deeply developed flavors of fudge, vanilla and caramelized sugar with a rich, decadent mouthfeel.

500ml - 14.6% - There is nothing quite like the comforting aroma that fills the home when baking with family. Inspired by late nights in the kitchen with Mom, Goose Island employee Paul Spiller sought to capture that sweet moment in this year’s newest member of the Bourbon County Brand Stout family. 2024 Bourbon County Brand Macaroon Stout is an imperial stout aged for a full year in bourbon barrels before adding rich cocoa nibs, sweet candied ginger and toasted coconut. This decadent stout is an homage to the flavors of homemade coconut macaroons with a twist of nostalgia.

500ml Bottle - 14.0% - It’s been six years since we released one of the most celebrated Bourbon County Brand Stout variants. Today, we're excited to warmly welcome the return of this iconic member of the Bourbon County Brand Stout family. Vanilla, as an ingredient, has made an appearance in Bourbon County lineups over the years, but the 2024 Bourbon County Brand Vanilla Rye Stout is a new take on our 2014 Vanilla Rye release. This year’s release showcases rye and the complexity it delivers by starting with a rye imperial stout and aging it in freshly emptied rye whiskey barrels. After aging in barrels for a full year, the stout is then finished with incredibly aromatic madagascar vanilla beans. Bourbon County Vanilla Rye Stout has the beloved attributes of the vanilla variants before it–with a new characteristically rich spice character from aging in the rye whiskey barrels.

500ml Bottle - 14.7% - Back in 2013, we created our first-ever Chicago exclusive member of the Bourbon County Brand Stout Family. Proprietor’s Stout was born out of immense gratitude to our city and to celebrate the birthplace of our brewery. This year marks the debut of a barleywine under the coveted Proprietor’s name. Having fallen in love with the popular Mexican spoon candy, brewer Colby Magratten crafted a recipe with our bourbon barrel-aged barleywine that blends together tamarind, lime, whole Guajillo chiles and piloncillo. Chicago and the people who call it home are forever a source of inspiration in all that we do. 2024 Bourbon County Brand Proprietor’s Barleywine is a direct reflection of that inspiration and unlike anything we've ever done before. With a subtle dried fruit sweetness, refreshing lime zest and a delightfully warming finish, this barleywine is decidedly Chicago.

500ml - 16.0% - As the creators of the first-ever bourbon barrel-aged stout, we have long sought to push the boundaries of what is possible in the world of beer. That’s why, when crafting this year’s 2024 Bourbon County Brand Cask Finish Stout, we were thrilled to work with our friends at Bardstown Bourbon Company. Drawing inspiration from Bardstown’s modern and creative spirit in finished whiskeys, this imperial stout takes the same journey as their Origin Series Rye. We began by aging our imperial stout in Bardstown’s freshly emptied straight rye whiskey barrels. From there, we transferred the beer to “hybrid” oak and cherry wood barrels that finished their rye whiskey. These incredibly expressive barrels deliver a remarkable finish unlike anything seen before in the Bourbon County family. A beautifully balanced beer, Bourbon County Bardstown Cask Finish Stout is deeply expressive with vibrant cherry, toasted oak and a lingering herbal finish.

765mL Bottle - 8.6% Strawberry American Wild Ale - Inspired by an amuse bouche often prepared by one of our Brewer's wives, Gillian brings white pepper, strawberry, and honey to a harmonious blend of "mouth amusement". The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Layers of malty complexity, sour cherry, spice and wood notes make Madame Rose an ideal beer to suggest to Bordeaux enthusiasts and beer drinkers fond of Belgian Kriek and Flanders Brown Ales.

14.5% - BA Rum Stout - We received freshly dumped American rum barrels that held pure cane sugar distilled rum for 2 years. We immediately filled them with our signature stout to see what nuances the barrels would impart. Fine Old Rum Barrel Stout showcases heightened notes of brown sugar, oak, molasses, and coconut shine through after a full year of resting in rum barrels. A summertime night sipper to share with friends.

Anniversary Cuvee is a blend of five different styles of beer aged at the Goose Island Barrelhouse. We hand-selected eleven unique sets of barrels and wove them together, blending them into a cuvee that is rich, intricate and balanced with notes of toffee, brown sugar, and cocoa. This celebratory 35th Anniversary release is a genuine showcase of our history and a toast to the city where it all began. Our city’s thriving culinary culture is a constant source of inspiration in everything we do and the reason that we can continue to push the boundaries of what can be done in the world of beer. Whether enjoyed before or after a meal, Goose Island Aperitivo Stout is beautifully complex and delightfully piquant. Inspired by the bittersweet Italian liquor Amaro, we aged our decadent imperial stout in bourbon barrels for a year and then infused it with a blend of 13 different botanicals. Every sip reveals different layers of citrus zest, baking spice & lush evergreen.

8.6% - Historical Barley Wine - Goose Island has collaborated again with Beer Historian Ron Pattinson and legendary London Brewer Derek Prentice for Black Eagle: No. 1 English Barley Wine. Black Eagle is a recreation of recipes from 1666-1989. Made at Goose Island’s brewery in Chicago from a blend of two batches brewed 9 months apart. The first being a 9 month barrel aged beer and the last third a fresh batch. This gives the beer the same aged beer character in aroma and flavor, while keeping some aspects of an unaged beer.

765mL Bottle - 8.6% Golden Ale - A golden ale aged in wine barrels with Orange Muscat grape juice, Brasserie Blanc has an aroma of semi-sweet Muscat grapes and a delicate body. A touch of tartness is cut by a dry finish imparted by the yeast Brettanomyces, resulting in a flavor profile that is reminiscent of wild-fermented old-world ales.

765mL Bottle - 11.33% Imperial Stout - Brasserie Noir is a barrel-aged imperial stout aged in wet cabernet barrels for up to 12 months. Dried fruit aromas and vanilla and currant tones frame the flavors of Brasserie Noir. This Imperial Stout balances malty sweetness with sharp acidity imparted by a twelve month aging process in Cabernet barrels.

4pk of 12oz Bottles - 11% - After 36 years of brewing here in the city of Chicago, we’re toasting to our hometown with our 10,000th batch of beer, Grand Cru. This very special Belgian-Style Strong Ale was aged in neutral oak barrels for 8 months, resulting in a stunning display of spice, fruitiness, and a luxuriously long finish.

13.2% - Rum Barrel Aged Quad - Our Small Batch series allows us to showcase our ability to express different nuances from the barrels we use in a variety of styles. In our latest iteration, we brewed a classic Quad Ale and aged it in American rum barrels for 9 months. Expect notes of vanilla, brown sugar, banana, and almond in this classic style.

15.5% - Barrel Aged Wheatwine - In our new series of Barrel House releases, we aim to showcase our ability to express unique nuances from the barrels we use in the styles you’ve yet to see. These highly limited beers will only be found at the taproom in bottles. With our Small Batch 2 Year Wheatwine, expect aromas of oak, caramel, and toffee with a medium, warming body. Aged in a blend of Heaven Hill and Buffalo Trace barrels.

15% - Barrel Aged Wheatwine - With Small Batch #4 we continue to explore the unique expressions of our barrel aged wheatwine. After aging in Wild Turkey barrels for two years we let this beer rest on toasted applewood honeycombs to impart the nuanced flavors of an additional wood. This process created something truly complex yet well balanced. A slight caramel sweetness, with a lingering chocolate aroma gives way to a nutty and raisin filled wheatwine with a warming, medium-bodied mouthfeel.

13.3% - Barrel Aged Wheatwine - In our new series of Barrel House releases, we aim to showcase our ability to express unique nuances from the barrels we use in styles you’ve yet to see. Aged for 2 years in a blend of Old Fitzgerald and Buffalo Trace barrels, our next Small Batch release is a bourbon barrel aged wheatwine with the unmistakable additions of peaches and cream. A decadent bouquet of peach aroma and sweetness with layers of caramel, apricot and whiskey delivered to you with a creamy, smooth finish.

15.4% - Double Barrel Barleywine - Alongside MORE brewing, we are excited to bring to you our version of Tusk & Feather. This double barrel-aged barleywine was aged in Elijah Craig rye whiskey barrels and was finished in another set of freshly emptied Elijah Craig rye whiskey barrels. Tusk & Feather is packed with notes of charred oak and rich toffee with an herbal finish.

13.8% - BA Imperial Stout - Last year we teamed up with Phase Three Brewing to bring you If You’re a bird…I’m a Bird. We took the base non-adjuncted stout from those beers, and let them rest in Willett bourbon barrels for 18 months. The result is Wooden Wings, a gorgeous, rich, full bodied stout. Expect a massive oak presence with dark chocolate and some slight caramel.

To the employees of Goose Island, Bourbon County Stout has always been more than liquid in a bottle. We’ve always known that, but to what extent we had no idea. A lot has changed at Goose Island since the first batch of Bourbon County Stout was brewed and barreled in the early 1990s. As time marched on, the folklore surrounding Bourbon County Stout became as rich and layered as the beer itself. Fact starts to blend with myth, and myth takes away from the process. This book has been updated for the 2019 bottling year.
