Named after the capital city of Malta. While in Valletta some years ago, I had a traditional Maltese pasty in at caffe founded in the 1800's, with combination of flavors I had never experienced. Upon speaking with pastry chef, I learned more of Malta's rich history and the mixture Italian, Spanish, Persian, and French cultures. He said that this pastry is the pride of these traditions.
After returning home I longed for these flavors and decided to crafted a latte that would be worthy of its namesake. For an entire year+ I tried various ingredients, ratios and build variations. Then one morning in February 2018, I had an epiphany: the build, ration, spice, process...everything came together and this drink is the result. Enjoy.
