The base of Tepache was originally corn, but today, the Tepache drink has a more modern recipe. Tepache is a fermented beverage made from the peel and the rind of pineapples. It is sweetened with piloncillo or brown sugar and is seasoned with powdered cinnamon and served cold. It is store in barrels to make the fermentation process go faster. Tepache can still be found today in Mexico and served chilled by street vendors.
