This coffee comes to us from the duromina cooperative by way of red fox, this small co-op of about 100 farmers produces exceptional coffees each year, the cup is remarkably viscous despite its light and juicy character and we taste peach and honeydew.

This is our third year working with red fox to buy from the santa maria yucuhiti region in oaxaca, this small group of majority women producers use fully organic practices and most maintain their own small scale worm compost facilities, this coffee is mostly typica variety with a little bourbon, the flavors span the spectrum: nutty to chocolatey to fruity. With the right roast, it comes through as floral and complex.

This two producer lot is super sweet, juicy and clean, I get hints of sweet apple and baking spice and generally just find it be an exceedingly pleasant cup to drink.

Deeply sweet, I taste almond, date and vanilla. The acid is very mild, making for an incredibly satisfying and rich cup.

Ysauro Tocto Chugden's coffee has a lot of subtle complexity in the cup, but I find the dominant cocoa note and the smoothness of the mouthfeel to be the highlight.
