In our take of the seafood paella we incorporates fresh, local, and sustainable seafood: squids, clams, mussels, prawns and monkfish. A base of sofrito cooked with sautéed onions and bell peppers, green beans, garlic and fresh tomato, and finished with bomba rice, saffron threads and our house seafood broth cooked with fish bones, prawn heads, vegetables and fresh herbs. Our paellas are cooked with extra virgin olive oil, real saffron, are gluten free and nuts free. Since we cook the paellas in large orders, the 'socarrat' (toasty bottom rice) might not be guaranteed in individual orders.
