A ground beef blend of prime brisket, short rib, and chuck. These burgers are done "smash burger" style which means we will have two 3oz patties pressed fairly thin and cooked. We are not taking temps on burgers- we cook them to one temperature. Both patties get Tonjes Caerphilly cheese melted on top, stacked on a brioche bun with lettuce, tomato, grilled onions that have been marinated in Worcestershire sauce, and our garlic-sumac aioli. Served with a Grillo's half-sour pickle.
