The Pursuit of Authenticity | Italian cuisine is known for its regional diversity and abundance of taste. From the North of the Italian peninsula to the South, authentic Italian cuisine is characterized by its simplicity and relies on high quality, fresh ingredients native to each region. Cappella Chef and Owner, Rob Picardi, whose heritage is steeped in Italian tradition, traveled extensively throughout each region of Italy in the “pursuit of authenticity” to fulfill his vision of one day opening a restaurant that replicated true Italian cuisine.
