Deconstructed Dolma (NF)
Most Americans know dolma as cold grape leaves with rice and tomato. Well, it is more than that elsewhere. In fact, it is most commonly served warm. here, our chef turned the dolma inside out to make it look like risotto. with lamb, tomato, butter, rice and served with a dollop of yogurt, aleppo pepper oil and microgreens. All the flavors of classic turkish dolma but none of its pretty looks. Share it or have it as a main course. Trivia: in Turkey, this dish is called çaput aşı, roughly translating to useless dish or dish for the useless/lazy. So there you go.
