      Big Joy is a slightly more developed roast than Skyline, and pairs exceptionally well with milk. We use Big Joy for all milk-based drinks in our cafe and it brews a dynamic, layered solo shot as well. But don’t count it out as a filter option! It will be delicious and sweet brewed with your favorite brewer. Our current Big Joy is a blend of Guatemala Chochajau from near Lake Atitlan and La Providencia from Huehuetenango. Together these coffees produce a densely sweet brew showcasing complex sugar flavors and crisp fruit character.

Our current offering is a blend of two outstanding coffees. Colombia Robinson Pillimué lends butter cookie sweetness balanced with juicy lime notes. Ethiopia Kawo Kamina contributes lively flavors such as orange zest, apricot, and vanilla. Together these coffees produce a brew with crisp fruit character and resonant sweetness.

    • Struttura, 12 Oz

      Struttura is an espresso blend focused on texture. The shots are dense and syrupy. The flavors are sweet, weighty, and dimensional. Currently it is composed of Guatemala Sierra Las Minas, Honduras Capucas, and Ethiopia Guji. Together these coffees produce sweet notes of dark chocolate, plum, and molasses, with a full, honey-like body. Struttura is easy to dial in and excellent for espresso, but it also brews a vibrant and balanced cup of drip.

      Not surprisingly, our tastes tend to shift with the seasons. We created this blend to have something sweet, round, and juicy to sip on during the holidays. We hope you enjoy it as much as we do. Ethiopia Suke Quto Farm is stretched out over the highlands and valleys of the Odo Shakisso woreda of Guji. Suke lends effervescent fruit notes and brightness to the cup. Guatemala Bella Elizabeth is an award winning farm in San Pedro Necta. It is extremely sweet with notes of maple and cacao nib. Together these two coffees create a harmoniously satisfying winter brew.

    • Mosaic Blend 12oz

      Mosaic is crafted to highlight the unique flavor characteristics of one or more coffees. Our roasters explore a variety of roast profiles and recipes to achieve a distinctive result. Mosaic should appeal to those with a more eclectic palate. This version of mosaic is a blend of washed and honey processed lots from Finca Agualinda in the Antioquia department of Colombia. Both lots are 100% Chiroso. Chiroso is an heirloom Caturra variety that has a much thinner and longer appearance than the typical Caturra growing in the region. The last few years have seen a spike in Chiroso lots winning top honors in the Colombia Cup of Excellence due to its unique flavor profile. In the cup we taste tropical fruit notes along with blackberry, bergamot, and red apple.

    • Moonrise Blend 12oz

      Moonrise is a blend of Ethiopia Sayfo Jago natural from Guji, and Colombia San Antonio- a producer blend from the San Antonio vereda of Inzá, Cauca. Together these coffees produce a syrupy brew with pronounced fruit notes. We particularly love this blend for espresso. Naturally processed coffees keep the whole cherry intact during drying, which imparts intense fruit character and body to the cup. Sayfo’s coffee lends juicy notes of lemon and raspberry while Colombia San Antonio is fully washed and adds complex sweetness and refreshing acidity.

    • Decaf, 12oz

      Goodnight Moon consists of carefully selected small batch decaffeinated coffees. The roast profile is well-suited for all brewing methods. This offering comes from the COOPAFSI cooperative in the San Ignacio province at the top of the Cajamarca region in northern Peru. Farms within the co-op are located in the buffer zones of environmentally protected areas and must operate with particular sensitivity to their natural landscape. This means working with organic methodologies to ensure a commitment to the protection of wildlife and native species. Local creatures that inhabit these areas include spectacled bears, jaguars, and tapirs—hence the tapir’s appearance in the name of this special coffee. Red honey processing, in which about half the mucilage is left on the coffee seed before drying, results in a sweet cup with notes of raspberry, cherry, pound cake, and raisin.

    • Colombia Las Flores Sidra, 8 Oz

      This Sidra lot from the Las Flores farm in Huila is a cornucopia of potent botanical flavors. Aromatically, the cup is heavily floral with notes of rose and jasmine mingling with dried orange peel and clove. In the cup we taste syrupy notes of peach nectar, cooked pear, kiwi, and woodsy pine. Johan Vergara’s parents, Edilberto Vergara and Nubia Ayure, arrived in Acevedo, Huila from Cundinamarca in 1990. They started cultivating Las Flores on two hectares of land, growing around 18,000 Caturra and Colombia trees. The farm has grown to over fourteen hectares with 90,000 coffee trees and one and a half hectares of dedicated nature reserve. Since 2006 the family has been adding other varieties such as Java, Pacamara, Tabi, Chorizo, and Sidra. Johan and his brothers have continued to expand their expertise in the areas of cultivation, processing, and cupping.

      This stunning peaberry lot showcases flavors of white peach, cherry blossom, and pomelo. For those who love fresh fruit notes and singing acidity, this coffee offers a classically crisp Nyeri profile. The Karatina Factory, or wet mill, is situated on the slopes of Mt. Kenya. 1,450 smallholders in this region contribute coffee cherries to the mill. Located at 1,650 meters above sea level, this region is defined by its bright red soils, which provide dense nutrients to coffee trees. The region’s high altitude allows for ideal temperatures and rainfall for the slow maturation of coffee cherries.
