    • Brazil Ipanema Dulce, Rain Forest Alliance

      this brazil comes from fazenda ipanema, where the rfa, rainforest alliance, certification mandates sustainable ecological and economic improvements. the nature and layout of the fazenda farm means the ripest of coffee cherry can be picked and sundried on the patios. the fruit dries and acts to enhance the flavor in the bean. once dried, it is hulled and placed into wooden silos for the "reposo" or resting period. 45 days later, lot samples are taken and bags are filled for export. arriving on the west coast, the coffee will be in a state of shock. after climatization, the coffee is released to cafe moto roasters. moto likes ipanema dulce for its "dulce", sweet, fruity character similar to a bing cherry with the mildest of acidity. brazil works well where smoothness is the key. we offer it straight and also use it in our giro d' italia espresso, "smooth through the curves". * the rainforest alliance works to conserve biodiversity and ensure sustainable livelihoods by transforming land- use practices, business practices and consumer behavior.

      the richest of the richest coffees of the world. so much press has given this the status as the only coffee in the world. granted the colombian coffee federation does help boost the farming industry. the coffee is very sound and a secure bet. if juan v. were still around, he would be proud. the year i met juan at the big coffee show, his big mustache and bright smile made such an impression i have a soft spot for colombian. really nice cup all day and works well cold brewed.

      again the llano bonito cooperative, tarrazu, is very fresh, having been stored in parchment until just prior to shipping. after the dry milling and cleaning, we add the "grain pro" liners to insure lasting integrity and flavor stability. llano bonito continues to deliver the sweet, vibrant, strong chocolate orange tasting coffee. we use llano bonito in the french 2 dark roast ft, espresso moto ft and to brighten several other moto mixes. the power of the relationship and the fair trade economics have meant clean drinking water, a medical clinic, books and school supplies and really great coffee. plus , hearing cooperative director, felix cabeza, sing is a real treat each time we dine.

      met with casil cooperative gerente general about the coming harvest of 12 apostoles. also learned and tasted a delicious "miel" , honey, they produce with the bee hives kept on the farms. they sell it to the local market and the coffee trees in the hive area seem to withstand fierce winds and heavy rains better. did agree on terms for another lot their organic fair trade coffee. peru, 12 apostoles co-op, this micro cooperative formed as the access to credit and financing for farmers becomes a reality with the fair trade model. having been organically farming for 40 years , the 12 founding growers decided their training and special attention to their coffee added to the cup.
