The restaurant is cloaked in the trademark red and black palette of Fouquet's Paris, with high-gloss wood paneling on the walls, parquet floors, curved leather banquettes, and cut-glass chandeliers. The menu, created in collaboration with Michelin-Star Chef Pierre Gagnaire, offers traditional brasserie fare similar to the Paris original — but with a New York riff, with beloved dishes like escargots, foie gras, and beef tartare. In addition to regionally sourced seafood, the bounty of fresh, high-quality ingredients available from New York’s farms will inform the menu.
